Some Of My Favorite Comfort Foods- Part One

When my boyfriend, Eric, and I first started dating, we would often (I say ‘often’ but I should really say regularly or frequently) cook for each other. Our first Christmas spent together was just Eric, his two brothers, his cousin, and me- due to altering family schedules. I made a HUGE feast and Eric wanted to make the mashed potatoes. He whipped up these and ever since has been making them for every major family feast and for some of our every day meals. Last Thanksgiving he made them for my (entire) family and they just raved about them. And then at Easter, when my mom made plain ole mashed potatoes, my little sis Rebecca, complained that they were not as good as Eric’s! Eric has even told me that he thought homemade mashed potatoes were too hard to make and took too much time- but now he says they are easy and oh so good.

(So I realize that this pic did not turn out too good. White mashed potatoes on a white plate! I should have added a dalop of butter or something! But trust me- these are some of the best and simplest taters you will have)

Eric’s Famous Mashed Potatoes

2-3 pounds Russet potatoes (approximately 3-4 large potatoes or 6-7 small potatoes)
1 cup sour cream
1 cup cheddar cheese
3 ‘stalks’ green onions, chopped
Salt and pepper, to taste

Leaving the skin on, cut the potatoes into small to medium chunks (the smaller the faster they will boil). Put cut potatoes into a large pot and cover with water. Bring potatoes to a boil and boil for approximately 15 minutes, or until potatoes become tender. Drain water and pour hot potatoes into a bowl. Add all of the remaining ingredients and using an electric mixer to ‘mash’ or ‘whip’ the potatoes and all of the ingredients. Serve immediately. Makes about 5 servings

Since these are so easy and require only a handful ingredients, they make the perfect addition to any meal any day of the week. They are one of my favorite comfort foods because they bring me back to those special family feasts and get togethers- most importantly they bring me back to mine and Eric’s first Christmas together (I know you can say it- AWWWW)!
