Day 4: Christmas Fruit Salad

I love a nice fruit salad any time of day but at breakfast is seems like just the perfect complement to some hearty sausage and eggs as well as some sweet pancakes.

I like that this salad uses fresh winter fruits and has a light, slightly sweet, slightly tangy, creamy sauce. But in case this fruit salad doesn’t tickle you fancy, I have several other fruit salads on the site, this Creamy Fruit Salad, Peach Pie Fruit Salad, and a Winter Fruit Salad that I did last year as part of the 12 Days of Christmas.

Christmas Fruit Salad

1 (20 oz.) can pineapple chunks, drained well
3-4 tangerines, peeled and segmented
1 cup purple grapes
1 Granny Smith apple, diced
1 Fuji apple, diced
1 lime, juiced and zested
2 1/2 tablespoons honey
1/3 cup vanilla yogurt

Combine the fruit in a large serving bowl. In a small bowl mix together the lime zest and juice, honey, and yogurt. Pour yogurt mixture over fruit and gently mix until the fruit is evenly coated. Serve immediately.
