Not all burgers need cheese.
I will be sharing some other burger recipes that have so many different other flavors going on and additional toppings that cheese would just totally take away from the integrity of the burger.
But sometimes the burger is all about the cheese.
Yes nothin’ pleases me more than a big juicy burger covered in a layer of melted cheddar cheese. Or provolone or Swiss. Or mozzarella or blue cheese.
Yeah the cheese can totally make a burger.
Define its personality.
That is totally the case for this burger.
There are quite a few different spice elements going on in this burger. From Cajun seasoning to jalapenos to hot sauce. All that may seem like a little much but what pulls it together is the cheese.
Pepper Jack cheese to be exact.
Pepper Jack cheese is a must.
No substitutions and no skimping.

Prep Time: 10 minutes Wait Time: 20 minutes Cook Time: 10 minutes Serves: 4
1/3 cup mayonnaise
1/2 tablespoon + 1 teaspoon Cajun seasoning
1 pound ground beef
1 large jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
2 tablespoon Worcestershire sauce
½ teaspoon hot sauce
4 slices pepper jack cheese
4 hamburger buns, split
salt and pepper, as needed
Additional toppings (as desired):
Preheat grill for medium-high heat.
In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, remaining Cajun seasoning, and Worcestershire and hot sauce. Chill meat for at least 20 minutes, then divide meat mixture into 4 balls and form into patties. Season patties with salt and pepper.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty.
Spread the seasoned mayonnaise onto the insides of the buns. Serve on burger patties buns with desired toppings, such as lettuce, tomatoes, red onions and pickles.
