Eric is one lucky guy.
I mean really the man has a fan-freakin’-tastic home cooked meal 5-6 nights a week (I mean with all the recipe developing and food writing I do it is kinda hard to avoid).
He is spoiled and he knows it.
sad funny obvious thing is that if someone is giving me a brand new kitchen toy appliance, how can I NOT use it?
I guess one might say that he is smart in that aspect, I just say that all those appliances and cookbooks are simply my ‘payments’ for cooking for him all the time. ; )
But because a lot of the cooking I do is for testing and developing purposes and paid work, the food he gets is exactly that, what he gets.
Very rarely is it his personal ‘request’ (but of course still good food nonetheless).
Sometimes he is skeptical or not the biggest fan (“Meatless Mondays” don’t always go over well) but he is grateful.
So every once in a while, I reward him with a meal just for him.
These Jalapeno Popper Burgers totally fall into that category. While some days I love jalapeno poppers other days I can’t stand the heat. But if it was up to Eric we would eat them several days a week.
These burgers are a wonderful compromise (compromises, the key to happy relationships).
Did I mention this guy is lucky?
Jalapeno Popper Burgers
Prep Time: 15 minutes Cook Time: 20 minutes Serves: 4
1 pound ground beef
2 tablespoons Worcestershire sauce
1 small onion, diced
2 garlic cloves, minced
6 slices bacon, cooked and crumbled
4 ounces cream cheese, softened
salt and pepper
½ tablespoons canola oil
1/2 cup shredded cheddar cheese
4 Hamburger buns
Preheat oven to 425 degrees.
In a large bowl gently mix ground beef with Worcestershire sauce, onions, garlic, and egg.
Finely dice one jalapeno. You can remove the seeds or leave them in for extra heat. In a small bowl mix diced jalapeno with cream cheese and bacon.
Divide ground beef into four equal patties.
Working with one patty at a time, flatten the patty and make a thumb-sized indent in the center. Put a heaping tablespoon of the cream cheese mixture in the indent.
Carefully fold the ground beef around the filling to make a ball. Then flatten the ball carefully to make a large patty. If a tiny amount of the filling leaks out or is showing, that’s okay.
Repeat with the other burgers and then season each burger well with salt and pepper.
Preheat a large non-stick skillet over medium high heat.
Add burgers and cook for 5-8 minutes per side or until desired doneness.
While burgers are cooking, place remaining jalapenos on baking sheet and drizzle with oil. Roast jalapenos in preheated oven for 10 minutes or until the skin is very blistered.
Top each burger with a whole roasted jalapeno and a bit of grated cheddar cheese. Return to the oven to let the cheese melt.
Serve burger on a toasted bun with any condiments you would like.
