Pina Colada Smoothie

It amazes me that so many foods remind me of certain situations or times in my life.

As I sit and try to write something witty, and funny, and drool worthy about my life and today’s recipe all I can think of is Eric’s late brother, Joe.

As much as I try and keep this blog, as in my real life, positive and upbeat, goofy and fun, (it’s a little hard to write about) Pina Coladas will always remind me of Joe.

Memories of sitting at this restaurant near my old house with Eric and his brothers eating appetizers and Joe and I drinking Pina Coladas together while the other guys drink more ‘mainly’ drinks such as beer. We all laughed and had a good time teasing Joe because he went on and on at how that restaurant made the best Pina Coladas and how Pina Coladas are such a girly drink.

I guess that’s how brothers do it. Tease and pick on one another, all in good fun of course.

Those were good times and surely ones I will remember for a lifetime.

This smoothie recipe is inspired by those memories and has all the flavors of a Pina Colada, sweet pineapple, tropical yet slightly nutty coconut, and just a slight hint of rum (in the form of rum extract, which, of course, is completely optional).

Enjoy the last month or so of summer and sip this Pina Colada Smoothie on the front porch while escaping to paradise and happy memories.

Pina Colada Smoothie

Prep Time: 10 minutes Serves: 2

2 (6 ounce) containers pina colada flavored yogurt

1 large frozen banana, sliced

1 ½ cups frozen pineapple, diced

½ teaspoon rum extract

½ cup coconut milk

3 tablespoons honey

3 tablespoons shredded coconut

Heat a small sauté pan over medium heat. Add coconut and cook, stirring constantly, until golden brown, approximately 2-3 minutes. Set aside.

In blender combine yogurt, banana, pineapple, rum extract, milk and two tablespoons honey. Blend until smooth and creamy.

To serve, place remaining honey on a plate. Roll rim of glass in honey and then roll honey coated rim in toasted coconut. Carefully pour blended smoothie in prepared glass and serve immediately.
