Strawberry Spinach Wrap

Sometimes I forget that sometimes, simple really is better.

With all the competition in the recipe world these days, you have to have the next brilliant idea. The best over the top dessert. The new and improved version of a classic.

But sometimes it is the combination of a few simple ingredients that makes something great.

Today’s recipe is a prime example of this.
A simple wrap, using classic flavor combinations to make a light lunch or dinner, perfect for summer.

Tangy cream cheese, paired with sweet summer strawberries, creamy avocado, healthy spinach and a drizzle of balsamic vinaigrette, all nestled in a soft flour tortilla.

I loved this as a healthy and vegetarian break from my regular mundane turkey sandwich that is my normal daily lunch.

Totally simple.

Totally perfect.

Strawberry Spinach Wrap

Prep Time: 10 minutes Serves: 1

2 medium flour tortillas

2 tablespoons cream cheese

4 strawberries, stems removed and sliced

1 cup baby spinach

1 small avocado, sliced

1/2 tablespoon balsamic vinaigrette

Spread 1 tablespoon cream cheese on one tortilla. Top cream cheese with ½ cup spinach, 2 sliced strawberries, 2-3 slices avocado, and 2-3 teaspoons balsamic vinaigrette. Repeat with remaining ingredients.

Fold bottom edge of each tortilla up, and roll tightly. Secure, if desired, with toothpick. Serve immediately.
