Website Wednesday: No Bake Raspberry Tarts

Heeeeyyyyy there!

It’s me here.

I’m still obsessing over the Olympics. (I absolutely loved the faces of the gymnasts when they realized the ‘nailed’ their gold worthy routine.)

And England. (Those accents. And Big Ben.)

(And, well anyone with an accent. Wink.)

So of course you can’t have English Fish and Chips without an English Tart for dessert.

Well the ‘no bake’ version of a traditional English tart.

(Here comes your fun food fact of the day.)

Traditionally English tarts consists of a shortbread crust, a custard made of milk or cream, eggs, sugar, and vanilla, that is baked then served topped with fresh fruit. The English consider these tarts special treats to celebrate special occasions, such as birthdays (even the Queen served one at her latest birthday shindig).

Or the Olympics.

And while the recipe below is not a *true* English tart by definition it is still a light and airy dessert that DOSEN’T have to be baked! Perfect for, well, the summer Olympics!

No Bake Raspberry Tarts

Prep Time: 15 minutes Serves: 15

15 mini phyllo shells

3 tablespoons graham cracker crumbs (about 1 1/2 cookie sheets)

1 tablespoon melted butter

1 tablespoon sugar

2 tablespoons honey

4 (ounces) cream cheese, softened

½ teaspoon vanilla

15 fresh raspberries

Combine crumbs, butter, and sugar in a small bowl. Spoon 1/2 teaspoon crumb mixture into the bottom of each phyllo shell.

Whisk together honey, cream cheese and vanilla in a small bowl. Spoon 1 teaspoon cream cheese mixture into each phyllo shell, topping the graham cracker mixture. Top each tart with 1 raspberry.

Sprinkle tops of tarts with remaining crumb mixture. Can be served immediately or refrigerated.
