Fall in the south is hit or miss.
Sure we definitely have (extremely) cooler nights and days compared to the summer, but some years you can wear shorts straight up till Christmas.
And even though I will force fall until my cheeks are rosy, the reality is that we will have 80-90 degree temps for weeks, possibly months.
So, what do you do when you want to eat the flavors of fall but really need something cold and refreshing to cool off with?
You combine the two and make apple popsicles!
I love how refreshing these Sour Apple Popsicles are! Slightly tart from the lemonade, but totally applelicious! They taste just like biting into a crunchy, tart green apple.
This Apple Juice Popsicle recipe is absolutely perfect if you live in a state where the fall includes a possible afternoon sweat! Plus, kids will love to help make them!
HELPFUL RECIPE TIPS AND INFORMATION:
Apple Popsicle INGREDIENTS:
- Apple Juice – You will want to look for 100% no sugar added apple juice. For a more robust flavor you could substitute pure apple cider.
- Frozen lemonade concentrate – This gives the popsicles a nice tart flavor profile.
- Unsweetened applesauce – Applesauce will increase the apple flavor in these apple juice popsicles.
- Water – Essentially you are using the water to transform the lemonade concentrate into lemonade, so you could omit the water and lemonade concentrate and substitute premade lemonade.
How to make apple juice popsicles:
- In a large pitcher, stir together apple juice, lemonade and water. Stir in applesauce.
- Divide the juice mixture evenly among the popsicle molds, filling the molds full. Insert the popsicle stick according to package directions.
- Freeze at least 3 hours or until firm.

How to make popsicles without a popsicle mold:
If you don’t have a popsicle mold, you can use small 3-ounce paper cups (like the ones you use for using mouthwash in the bathroom). Simply divide the juice mixture evenly among the cups. Cover each paper cup with a piece of aluminum foil.
Use a knife and cut a small slit into the center of the foil and insert a wooden craft stick. Freeze as directed in the recipe. When ready to eat, remove the foil and tear off the paper cup.
