I think that most holiday food gets a bad rap of being bad for you.
You know because of all the sweets.
So when I set out to create recipes for this special Halloween themed week I wanted to make sure and have some fun, cute, yet tasty Halloween treats that weren’t all about the candy.
While yesterday’s recipe and a few others later this week are fun sweet treats, today and tomorrow’s recipes are more on the ‘healthier’ side and are actually meals, not just treats.
Today I am sharing a recipe for Pumpkin Pie Smoothie, turned into a fun Halloween treat by being served in a decorated jack-o-lantern cup.
The idea came to me last December when I made a Frosty the Snowman Smoothie in similar fashion. So I have been sitting on this idea all these months and happily whipped up my Halloween/fall version a week or so ago.
I originally was going to share this as part of my pumpkin themed week last week, but decided to hold off for this week to show that holiday food can be good for you.
This smoothie would be a great breakfast or snack. I actually made up a big batch and kept it in my fridge for a few days for a quick breakfast or snack on the go.
Pretty much all the recipes this week are great to get the kids in the kitchen and helping with cooking. Seriously what kid isn’t going to want to whip up a Halloween goodie! And while this smoothie is super simple, just dump the ingredients and blend, the kiddos will have fun decorating their cup into funny jack-o-lantern faces and can even help measuring ingredients and pushing the buttons on the blender (why do kids think a blender is so cool?).

Jack-o-lantern Smoothie (a.k.a Pumpkin Pie Smoothie)

Prep Time: 5 minutes Serves: 2
Pumpkin pie smoothie:
2 tablespoons honey (or pure maple syrup or 1 tablespoon agave nectar)
1 cup light vanilla yogurt
1/3-1/2 cup vanilla flavored soy, almond or coconut milk (or skim milk)
2/3 cup pumpkin puree
½ teaspoon vanilla
½ teaspoon pumpkin pie spice
Supplies:
Clear plastic cups
Black permanent markers
Green straws
For pumpkin pie smoothie:
Combine all ingredients in a blender and process until smooth.
For Jack-o-lantern cup:
Draw jack-o-lantern face on plastic cup using marker. Pour prepared smoothie into cup.
