Day 7: Peppermint Bark

I kind of feel silly sharing this ‘recipe.’

 

I mean it is *only* two ingredients and is pretty self-explanatory and quite possibly the easiest thing you could ever make (plus I am sure everyone knows all about it, already).

But maybe that is just what we all need this time of year. Easy, two ingredient things, that anyone can make.

Bark is simply melted chocolate that is topped with whatever toppings you desire. Plain and simple but oh so good. Eric insisted that we needed Peppermint Bark in our lives right now and I am so happy he is so good at insisting, because this simple treat that comes together in mere minutes IS exactly what our lives needed right now.

Plus who wants spend like $10 bucks on a tin of bark at the store when you can make it for a dollar or two at home.

So that is why I am sharing this ‘recipe’ in case you need a reminder a simple two ingredient treat (or gift) can be whipped up even when life gets a bit crazy during this time of year.

Peppermint Bark

Prep Time: 5 minutes Cook Time: 1 minute Wait Time: 5 minutes

6 ounces peppermint candies (approximately 6 candy canes or 15 peppermint candies)

12 ounces white chocolate

Line baking sheet with wax paper, set aside.

Crush candy canes in a food processor. If you don’t have a food processor, place candy canes in a freezer zip-top bag, seal, and crush with a rolling pin or meat mallet. Candies should be small to medium sized pieces. Set aside.

Place white chocolate in a microwave safe bowl. Microwave for 30 seconds then remove and stir. Microwave for an additional 30 seconds and stir again. Repeat microwaving/stirring process until all chocolate is melted.

Pour melted chocolate on wax paper lined baking sheet and smooth until even and approximately 1/8-inch thick.

Let bark sit at room temperature until harden, or place in refrigerator for 5 minutes until hard.

Remove and peel away wax paper. Use knife to cut/break bark into pieces.
