Ok guys.
You know my obsession with oatmeal.
I mean for years I have had entire theme weeks dedicated to just to oatmeal. Usually these theme weeks have occurred in January because well, what is better on a cold, winter morning than a big bowl of oatmeal, plus January also happens to be national oatmeal month (in case you didn’t know).
However, the warmer times of the year have never kept me from enjoying a big ‘ole bowl of hearty oats. In fact, my love of oatmeal is so great that I have made several ‘summer’ versions, from Peach Crisp Oatmeal to Blackberry Cobbler Oatmeal and even a S’mores Oatmeal.
But for some reason, the past few months I have just not been in the oatmeal kind of mood. Maybe it is the warm weather or maybe (honestly) I was experiencing oatmeal burnout.
But a few weeks ago I started craving it again! And since it is summer and all, I wanted to create a summer inspired flavor… Strawberries ‘n Cream Oatmeal.
This version is sweet and creamy with pops of fresh strawberry goodness. The good thing is, I bet you already have all the ingredients for this in your fridge or pantry and this satisfying breakfast only takes minutes to whip up; making it a great meal to get your day started off right!

Strawberries ‘n Cream Oatmeal

Prep Time: 5 minutes Cook Time: 5-8 minutes Serves: 1
Oatmeal:
2 tablespoons strawberry jam
1 cup milk (almond, coconut, soy, etc.)
½ cup water
¾ cup rolled oats
5 strawberries, diced
½ teaspoon vanilla
Topping:
2 tablespoons half and half cream
4 strawberries, sliced
Place strawberry jam in a microwave safe bowl and microwave for 5-10 seconds.
In a medium sized sauce pan, combine milk, water, oats, strawberries, vanilla and jam. Stir to combine and bring to a boil.
Lower heat to a simmer and cook, stirring occasionally, for 5 minutes or until liquid is absorbed and oats are tender. Serve immediately topped with half and half cream and additional sliced strawberries.
Note: Fresh strawberries are ideal, but frozen could also be used.
