Mocha “Latte” Cupcakes and Iced Mocha Latte

​It’s that time of year… when all the holiday and seasonal festivities take hold of our calendar leaving many of us with little ‘me’ time.

But as I mentioned in several other recent blog posts, that I am personally trying to ‘schedule’ more time for ‘just me’ during the day. Just a moment to sit out on the porch, enjoying the crisp fall air and maybe a refreshing drink or sweet treat.

For many, these moments of escape mean heading to the coffee shop or nail salon, but ‘me time’ can happen right at home.

Today I am teaming up with Green Mountain Coffee to bring you a recipe for a sweet treat and sharing their new line of iced coffee.


I personally can’t drink my coffee black. I like it sweet and creamy with a hit of flavor. I also think chocolate and coffee are two classic flavor combinations that go together like oranges and cranberries, peanut butter and jelly, milk and cookies… AND…. well you get the idea!

These cupcakes are a ‘grown up’ version of my favorite One Bowl Chocolate Cupcakes. Infused with a robust cocoa and coffee flavor, then topped with a rich ‘latte’ frosting and a dreamy chocolate ganache drizzle; these cupcakes are dedicate and totally worthy to be included in a daily dose of ‘me’ time.



Mocha “Latte” Cupcakes

Prep Time: 15 minutes Cook Time: 18-20 minutes Makes: approximately 24 cupcakes

2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
3 cups flour
3/4 cup cocoa powder
2 tablespoons lemon juice
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup strong brewed black coffee
1 cup Green Mountain Coffee Espresso Roast Iced Mocha Latte

Preheat oven to 350 degrees. Line cupcake pan with paper liners.

Mix all ingredients together in a large mixing bowl until well combined. Spoon batter into prepared cupcake pan, filling approximately two-thirds full.

Bake in preheated oven for 18-20 minutes or until toothpick inserted in center of cupcake comes out clean.

Let cupcakes cool completely before frosting with Mocha “Latte” Buttercream Frosting and drizzling with chocolate sauce (recipe below).

Mocha “Latte” Buttercream Frosting

Prep Time: 10 minutes Makes approximately 2 cups frosting

Frosting:
1 cup butter, softened
1 teaspoon vanilla extract
1/3 – ½ cup Green Mountain Coffee Espresso Roast Iced Mocha Latte
6 cups powdered sugar

Chocolate Drizzle:
1/3 cup milk chocolate chips
3-4 tablespoons heavy cream

For Frosting:
Using an electric mixer, cream together the butter and vanilla extract, until fluffy. Slowly add the powdered sugar, one cup at a time, alternating with 1-2 tablespoons of the Green Mountain Coffee Espresso Roast Iced Mocha Latte. Continue mixing in the sugar and latte drink, adding more as needed, until desired consistency is reached.

For Chocolate Drizzle:
Place chocolate chips and heavy cream in a microwave safe bowl. Microwave for 30 seconds, remove chocolate from microwave and stir until chocolate is completely melted and smooth in consistency. Return chocolate to microwave, if needed, to further melt chocolate.
