It’s that time of year.
The time where a dirty four letter word enters most of the world’s vocabulary.
D.I.E.T.
I swear every ‘real-life’ person I know is on a diet.
And every ‘invisible’ internet friend and blogger is on a diet too.
And here is a shocking confession, I like all the rest of you am ‘trying to watch what I eat.’
Not a diet per say, more like I need to consume as much leafy greens, juicy fruits and lean proteins (not covered in massive amounts of cheese or deep fried) as humanly possible. You know, to make up for the 14 pounds of butter and 10 pounds of sugar I consumed during the holidays.
Oh and I am doing the no processed sugar thing again (as part of this challenge I did on and off last year). Which totally contradicts the recipe I am sharing today.
This Creamy Fruit Salad walks that fine line of being able to slap a big fat healthy label on it.
This is my version of my Mom’s recipe; a salad I grew up eating and actually posted back in the early days of the blog. It is one of my favorite salads and if you omitted the marshmallows it IS actually healthy. With fresh (or canned) fruit, Greek yogurt and coconut this salad makes for a perfect potluck side dish or even breakfast for all those crazy New Years diets.
But if you like to live on the wild side, the marshmallows add an extra creaminess and hit of sweetness that I have loved since my childhood.

Creamy Fruit Salad

Prep Time: 10 minutes Serves 4-5
1 cup plain Greek yogurt
1 (15 ounce) can pineapple tidbits, drained (or approximately 2 cups fresh pineapple)
2 (11 ounce) cans mandarin oranges, drained (or approximately 2 1/2 cups fresh mandarin oranges or tangerines, peeled and segmented)
1 1/2 cups miniature marshmallows
1 cup coconut flakes
Stir all together in a large bowl. Serve at room temperature or chilled.
