I think sometimes food bloggers think that they need to come up with the next jaw dropping recipe. Loaded with all sorts of ingredients and full of crazy flavor combinations. However, sometimes the simplest recipes, with few ingredients, minimal prep (and dishes to clean up!) are what we need in our busy day to day lives. Since my life, like yours, is super busy like all.the.time. I could definitely use more simple and easy to prepare recipes in my life. To help inspire you to start creating your own 5 Ingredient Fix Recipes, I am sharing a recipe for 5 Ingredient Creole Potato Salad.
Don’t be fooled, even though this recipe only has five ingredients, it is packed with flavor! It has that infamous Creole heat and a lovely mix of textures from the potatoes, sausage and crunchy celery. This potato salad would be the perfect side dish to wow all your friends at all those upcoming cookouts and picnics!

Easy Creole Potato Salad

Prep Time: 10 minutes Cook Time: 15 minutes Serves: 6
8 ounces andouille sausage, diced
1 (24-ounce) package Simply Potatoes Steakhouse Seasoned Diced Potatoes
1 stalk celery, chopped
1/3 cup mayonnaise
3 tablespoons Creole mustard
Heat a large non-stick pan over medium-high heat. Add sausage and cook for 3-4 minutes, or until sausage is crisp. Using a slotted spoon, remove sausage from pan and transfer to a paper towel lined plate.
Add potatoes to pan and cook for 2-3 minutes. Add a splash of water to pan with potatoes; cover and cook for 12 minutes, or until potatoes are fork tender, stirring occasionally.
Transfer cooked potatoes to a large bowl. Add sausage and celery to potatoes and stir to combine. Let potatoes cool slightly. In a small bowl stir together mayonnaise and mustard. Pour mayonnaise mixture over potato mixture and stir to combine.
Serve potato salad immediately, or cover and refrigerate for 2-3 hours.
