Most people are die hard gas OR charcoal grill fans, but usually not both. To me, nothing beats a charcoal grill and that smokey flavor and crispy texture it lends to anything that is cooked on it. But, I can also be impatient and sometimes I don’t want to wait for charcoal to heat up or deal with the mess it brings with it. That’s why I would love to have both a charcoal grill and a gas grill, so that whenever the mood strikes, I can run outside and simply turn a knob and BAM! be instantly grilling up a storm!
Our go to cookout favorites are burgers (I make a mean homemade burger) and hot dogs. Yeah, nothing fancy, but that’s what makes a backyard barbecue perfect, the casualness!
Yup, I’m no food snob and enjoy an all beef hot dog at summer get togethers. In fact, I think hot dogs are quintessential to summer fun! Typically I am happy with some spicy mustard, dill relish and diced yellow onion; but sometimes I want to dress it up and smother that plain hot dog with some obnoxious, yet mouthwatering topping.
These Spicy Grilled Hot Dogs with Bacon Corn Relish are so good! I first made them when we had a leftover package of hot dogs from a cookout and needed to use them up but was bored with just the typical mustard and pickle relish. So I went looking for ideas and this recipe for Spicy Grilled Hot Dogs with Bacon Corn Relish instantly caught my eye… I mean hello… caramelized onions and crispy bacon… HOLY YUM! These ain’t no boring hot dogs, them are fancy pants hot dogs! 😉

Spicy Grilled Hot Dogs with Bacon Corn Relish
These Spicy Grilled Hot Dogs with Bacon Corn Relish are an amazing way to dress up boring store bought hot dogs!
Ingredients
- For Bacon-Corn Relish and Spicy Hot Dogs:
- 8 slices thick cut bacon, diced
- 2 large onions, diced
- ½ teaspoon each kosher salt and black pepper, divided
- 8 ears corn, kernels removed (or 2 ½ cups frozen corn, thawed)
- ½ teaspoon sugar
- 8 all beef hot dogs
- 2 tablespoons hot sauce
- __
- For serving:
- 8 hot dog buns
- 4 tablespoons unsalted butter, melted
- 4 tablespoons mayonnaise
- 4 tablespoons whole-grain mustard
- 1/3 cup crumbled Cotija cheese
- ½-1 teaspoon cayenne pepper
- 4 tablespoons chopped fresh cilantro
- Fresh lime wedges
Instructions
- For Bacon Corn Relish: Heat a large skillet over medium-high heat. Add chopped bacon and cook until crispy, about 6-7 minutes. Using a slotted spoon, transfer the bacon to a paper towel lined plate and set aside.
- Add chopped onions and ¼ teaspoon each salt and black pepper to bacon grease in skillet. Cook, stirring occasionally, until the onions are caramelized, about 15-18 minutes. Add corn and cook for 5-8 minutes, stirring occasionally. Stir in sugar, remaining salt and black pepper. Remove from heat and stir in bacon. Set aside.
- For Hot dogs: Preheat grill to high heat. Brush hot dogs with hot sauce and grill until slightly charred and heated through. Meanwhile, brush the inside of the hot dog buns with melted butter and arrange, butter side down, on the grill. Grill until lightly golden brown, about 30-60 seconds.
- For Serving: Thinly spread the mayonnaise and mustard onto each toasted hot dog bun. Put the hot dogs into the buns and top with approximately 2-3 tablespoons of the bacon-corn relish, 1/2 tablespoon of Cotija cheese, a dash of cayenne pepper, 1-2 teaspoons fresh cilantro and some fresh lime juice.
