Blueberry Muffin Smoothie

For as long as I can remember, I have been in the kitchen cooking. If I think real hard, the earliest thing I can remember cooking was helping my Mom make muffins one Saturday morning when I was three or four years old. That day, waking up and stumbling up the stairs in our multilevel home to find my Mom vacuuming in a horrific 80’s style nightgown; is probably one of my earliest memories. After she grabbed me up and pulled me tight into a hug, we went into the kitchen (located on the top level of that home) to make some blueberry muffins before sitting down to watch Saturday morning cartoons together. Ahh… that was the life!

My Mom loved to bake and my siblings and I were always in the kitchen helping her. As I got older, around third or fourth grade, my love for cooking truly began to blossom as I yearned to learn more about cooking and baking. At that age, I had no idea that I could eventually make cooking and creating recipes a job- a career, in fact. You see, cooking, all.the.time. makes me so happy and really, is my calling in life… It brings me so much joy to cook for others and to see their happiness as they enjoy the food I carefully prepared for them.

While I love cooking, the clean up part, well, that’s another story. Even when I was a child, my Mom had to constantly fuss at me to clean up the kitchen after myself. She joked that if my cleaning skills were as great as my cooking skills then I would be set in life. But the truth is, it’s not that I couldn’t clean, it’s just not where I wanted to spend my time and energy. Obviously.

To this day nothing has changed. I can tear up a kitchen making a small or extravagant meal and the clean up part is still the tiny aspect of cooking that I absolutely loath. Now as an adult, I am always looking for kitchen cleaning hacks, so I don’t have to spend so much time in the kitchen just cleaning; but can really focus on where my true passion is- cooking and creating recipes; and of course sharing them with others.

If you have been reading this blog for any amount of time, then you know I am a HUGE smoothie drinker. Which, as I type this, seems kind of ironic, since smoothies are one of the easiest things one can make in the kitchen, and something you really don’t even need a recipe for… Well, at least for me anyways. Most days I just throw whatever fresh or frozen fruits I have on hand into my blender, and add some yogurt, milk, honey or maple syrup and any other flavors or health foods (spinach, kale, ground flax seeds, rolled oats, chia seeds, etc.) I have.

But then of course the creative juices start flowing and I want to create smoothies that are inspired by my favorite foods, flavors or memories. That’s how today’s Blueberry Muffin Smoothie recipe was born. After reminiscing about my childhood and those warm blueberry muffins my Mom made me that early Saturday morning when I was three, I wanted to create a “muffin” recipe that was healthier and easier to make and clean up, so this blueberry muffin flavored smoothie was born!

Since I have always been a huge smoothie drinker, when I learned a kitchen hack to clean my blender quickly and instantly, it was life changing! No, seriously! I am very picky about dish soap and other cleaning products because I just want to clean once and not have to waste time doing the dishes again an again because they weren’t cleaned well the first time. That’s why when I saw the new Palmolive® Fusion Clean™ dish liquid at my Kroger store, I picked some up to help me clean my blender pitcher and other dishes with very little effort! Today I am teaming up with Palmolive® to not only share this delicious Blueberry Muffin Smoothie recipe, but one of my go to kitchen hacks (see below!), to save time and energy in the kitchen!

A cold and creamy smoothie that tastes like a popular breakfast pastry!
Course: Breakfast

Ingredients
  • ¼ cup rolled oats
  • ½ cup unsweetened vanilla almond milk
  • 1 cup frozen blueberries
  • 1 tablespoon almond butter
  • ½ cup plain or vanilla Greek yogurt
  • ½ tablespoon pure maple syrup
  • ½ teaspoon vanilla extract
Instructions
  1. In a small bowl, stir together rolled oats and almond milk. Set aside for 5 minutes.
  2. Combine soaked oats with all remaining ingredients in a blender. Blend on high for at least 3 minutes or until smooth and creamy, scraping down the sides of the blender, if needed. Add additional milk or frozen blueberries, if needed, to reach desired constancy. Serve immediately.

Kitchen Hack: How To Clean a Blender

Cleaning a blender is a breeze with this simple kitchen hack!

1. Fill blender pitcher 1/3 to 1/2 full with hot tap water.
2. Add 1-2 drops of Palmolive® Fusion Clean™ Baking Soda & Lime dish liquid.
3. Put lid on blender pitcher and blend on high for 30-60 seconds.
4. Remove lid from blender pitcher and rinse pitcher and lid thoroughly with with hot water.
5. Dry blender and pitcher with a clean kitchen towel and store for later use.
