These dainty Raspberry Key Lime Mousse Tarts are a light and delightful mini dessert, suitable for any summer dinner party!
I must confess I am obsessed with home shows. Not necessarily the home improvement shows, where they break down and show you each step to refurbishing a bathroom; but more like the house hunting shows.
I could spend hours watching those house hunter shows, and shows about mansions or beach front properties and even tiny homes. And well ok, even a few of those home makeover shows and house flipping shows.
I just love seeing the different homes they feature, the scenery and I love to take note of the differences in the homes from one region of the US to another and abroad.
From countless hours spent carefully analyzing these shows, I have come to the conclusion that while I find it fascinating, I could NEVER live in a tiny home. I could, however, possibly take on a home flip (if only I had a secret bank account filled with lots of $$); that I want a beach house AND cabin in the mountains, and then a whole laundry list of features that my dream home must have. These shows have me constantly day dreaming and enthusiastically home searching.
Two simple, yet very important “top of the list” requirements for our future home, is a large (like small room) walk in pantry and ability to have two refrigerators, if not both in the kitchen, the second fridge in very close proximity to the kitchen, without being an eye sore. With as much cooking as I do and how much we love to entertain, these two things are essential. In fact, the place I live now (just one step up from a tiny home), I had to convert the coat closet into a second pantry and I still don’t have enough room for all my baking supplies and obscene amount of nut butters.
Ahh… a girl can dream, right?
Well, whether you currently live in your dream home or you are still working on it, if you love to entertain, having a collection of go to easy to prepare recipes is essential! Today’s recipe is one of those recipes. I have made some variation of these Raspberry Key Lime Mousse Tarts for countless dinner parties and events over the years and they remain one of my go to dinner party recipes. While the tarts themselves should be assembled right before serving (so the tart shell doesn’t get soggy), the Key Lime Mousse filling can be made a few days in advance. I love these tarts for summer dinner parties since they are no bake, light and refreshing!

Raspberry Key Lime Mousse Tarts
These no bake, light and refreshing mini tarts are bursting with flavor!
Ingredients
- ½ cup heavy whipping cream
- 1 (8-ounce) package cream cheese, softened
- 2/3 cup sweetened condensed milk
- ¼ cup key lime juice, from about 8-10 key limes
- 2 teaspoons key lime zest, from about 3-4 key limes
- 2 (1.9 ounces) packages frozen miniature phyllo tart shells, thawed
- 30 fresh raspberries and key lime slices, for serving
Instructions
- In a large bowl, using a hand-held mixer or stand mixer fitted with the whisk attachment, beat the whipping cream until soft peaks are formed. Set aside.
- In a separate large bowl, beat until smooth the softened cream cheese, sweetened condensed milk, key lime juice and zest. Gently fold in the whipped cream.
- Chill mousse for at least one hour before piping into tart shells. Top mini tarts with raspberries and key lime slices. Serve immediately.
Notes
Note: Key lime mousse can be made up to 2 days in advance and stored in the refrigerator.
