This super easy appetizer recipe, Hot 7 Layer Dip, is a new twist on a tailgating favorite! Get the recipe and some other football food and party ideas!
For many, football on Thanksgiving Day is just as important as the feast itself. In fact, growing up my Grandmother and Aunt, who usually always hosted Thanksgiving dinner, always served “dinner” early afternoon, more like a lunch feast, so that all the men folk could go watch some football game after eating. Or just eat other more “football eats” like this Hot 7 Layer Dip. LOL!
Unfortunately for all you football fanatics out there, football season is quickly coming to an end with only a few more weeks left of games before big championship games take place.
Since Thanksgiving weekend involves a lot of food and football watching, and since we are in the final stretch of football season, AND since I live the motto “go big or go home;” I thought it would be fun to share a few more football themed recipes and tailgating ideas before the season is over.
If you recall, last week I got together with some friends and fellow bloggers to celebrate all things football! There was football décor, a little friendly talk about our favorite football teams, and of course, lots of delicious football eats! We even got a little bit crafty and decorated coolers in our favorite team’s colors!
Not only was it fun mixing and mingling with these other talented bloggers, each blogger brought a delicious dish to the party; which by the way, if you are hosting a party, going potluck style makes things so much easier.
For the party I made Hot 7 Layer Dip! 7 Layer Dip is such a classic party food, especially for football parties, but I decided to take mine up a notch and make mine hot and bubbly! In addition to lots of melted cheese, my Hot 7 Layer Dip recipe has layers of seasoned refried beans, ground beef, plump sweet corn and Minute® White Rice. I topped the hot from the oven dip with some other popular 7 Layer Dip indigents, fresh, crisp lettuce, tomatoes and avocado.
Even though the list of indigents and directions for this recipe may seem long, this appetizer recipe (which is equally delicious served as a dinner casserole) comes together really quickly with the help of Minute® Rice. Rice is one of my pantry staples because it goes with just about anything and is so easy to prepare!

Not only were these appetizers and entrees perfect for a football watch party; since this time of years is so busy and filled with so many other holiday events and parties, each one of these easy recipes would be perfect to make all holiday season long!

- For Hot 7 Layer Dip:
- 1 (15-ounce) can refried black beans
- 1 (4-ounce) can diced green chiles
- ½ teaspoon each kosher salt and black pepper
- ½ tablespoon canola or coconut oil
- 1 pound ground beef
- 1 (4-ounce) package cream cheese room temperature
- 1 large onion diced
- 1 (1-ounce) packet taco seasoning
- 1 cup Minute® White Rice
- 1 (15-ounce) can no salt corn drained and rinsed
- 1 ½ cups grated cheddar or Colby jack cheese
- For serving:
- 1 cup shredded iceberg lettuce
- 1 Roma tomato diced
- 1 small avocado peeled and diced
- Tortilla chips
- Preheat oven to 350 degrees F.
- In a large skillet over medium-high heat, stir together refried beans, green chiles and ¼ teaspoon each salt and black pepper. Cook for 3-4 minutes and then transfer to a pie dish or 9x9-inch pan, spreading into an even layer.
- Return skillet to burner. Add oil to skillet and heat over medium-high heat. Add ground beef and cook, breaking up the meat with a spatula, until cooked through and no longer pink, about 6-7 minutes. Using a slotted spoon transfer ground beef from skillet to a paper towel lined plate, reserving some of the grease in the skillet. Add onion to skillet and cook until translucent, about 5-7 minutes. Add garlic and cook for 1-2 minutes.
- Add cream cheese to skillet and cook, stirring occasionally, until melted, smooth and creamy. Stir in cooked ground beef, taco seasoning, ¼ teaspoon each salt and black pepper; and cook for 1-2 minutes. Pour ground beef mixture over the beans in the pie dish, spreading into an even layer.
- Meanwhile, in a small saucepan, bring 1 cup of water to a boil. Stir in 1 cup of rice. Remove from heat and cover. Let stand for 5 minutes, or until water is absorbed. Fluff rice with fork and set aside.
- Top ground beef mixture with corn and top corn with rice. Cover rice with grated cheese.
- Bake dip in preheated 350 degrees F oven for 20-25 minutes, or until cheese is melted and dip is hot and bubbly.
- Serve immediately with tortilla chips and topped with desired fresh toppings including shredded lettuce, diced tomatoes and avocados.
