I have very distinct and fond memories of my great-grandmother. I can remember playing with my first and second cousins in the laundry room of all places at her small town home. I remember large extravagant family reunions with 200+ extended family, that sadly stopped occurring once my great-grandmother got to sick.
I remember sitting around her large antique dining room table, the chair seats covered in an ugly pale green fabric and plastic, straight from the 60’s, for many family meals. And I remember the food. Divinity was my great-grandmother’s favorite candy. Cola and sweet tea, her favorite drinks. I remember eating dumplings on cold winter nights at her house and her famous glazed carrots at various holiday meals.
Even though everyone in our family raved about her sweet glazed carrots, when I was a kid, I despised cooked carrots (ironically, they were my favorite vegetable when served raw) and didn’t give them a try until I was a bit older and I finally realized those glazed carrots were actually pretty good!
I’ve definitely expanded my palate more ways than one since I was a little girl, and like pretty much any vegetable prepared any way. But cooked carrots, specifically those classic glazed carrots, will always have a special place in my heart and remind me of her.
This Hickory Bourbon and Brown Sugar Glazed Carrots recipe is a dressed-up version of my great-grandmother’s classic glazed carrots. I use mini rainbow carrots for a stunning and colorful side dish, and the glaze is a nice balance of sweet and tangy, with the addition of Stubb’s Hickory Bourbon Bar-B-Q Sauce and dark brown sugar. I first dished these up at a holiday dinner last year and have since made them for dinner parties, weeknight suppers and even cookouts.

Glazed carrots are a classic holiday side dish! This kicked-up version is nice balance of sweet and tangy, making it a stunning and colorful twist.
- 1 pound peeled mini rainbow carrots
- 1/2 cup water
- 3 tablespoons unsalted butter
- 1/3 cup packed dark brown sugar
- ¼ cup Stubb's Hickory Bourbon Bar-B-Q Sauce
- ½ teaspoon each Kosher salt and freshly ground black pepper
- 2 tablespoons fresh flat leaf parsley chopped
- In a small saucepan, toss together the carrots, water, butter, brown sugar, Stubb's Hickory Bourbon Bar-B-Q Sauce, salt and black pepper.
- Bring carrots to a boil. Boil for 5 minutes then reduce heat to a medium low and simmer, partially covered, stirring occasionally, until the carrots are tender and the liquid has reduced to a glaze, about 6-8 minutes. Serve immediately topped with fresh parsley.
