Looking to change up your dinner routine? Try one of these colorful curry recipes and add a pop of flavor to your weekly menu! Plus, check out all the details for a colossal curry cook-off happening in Austin, Texas!
I’d like to say that I have a pretty diverse palate and am pretty comfortable in the kitchen, baking and cooking a wide variety of foods. However, there is always room for growth, especially when learning about different cuisines. One area that I am challenging myself to cook more of, is Indian and Thai food (hence the reason for a round up of colorful curry recipes). I have eaten a lot of Indian and Thai dishes over the years, even sharing a few recipes, but to be honest, it is not the first cuisine that pops into my head when I am menu planning or deciding on a new restaurant to try (let’s face it, I live in Texas and pretty much eat, sleep and breathe Tex-Mex).
In an effort to contentiously immerse myself in the food world, this is something I am working on changing. This means going to more food/cooking related events, trying different restaurants (totally not complaining about that!), and good ole’ practice, practice, practice! To aide me in adding more variety to our weekly menu, I am sharing a round up of twelve colorful curry recipes, inspired by the upcoming Austin Food Blogger Alliance Colossal Curry Cook-Off, which I have been working to help organize (with a number of other local bloggers) for the past few months. If you are in central Texas, check out all the details below!

Thanks for featuring my Vegan Pumpkin Curry! I also have been trying out more Asian and Indian dishes. Ever since I returned from India, I’ve wanted to recreate it. We should cook together soon! The two of us should be able to figure it out, right?! 🙂
