As you may know, I have lived in Texas for most of my life. And most of my adult life, I’ve called central Texas my home. Obviously, for more reasons than one (from beautiful sights, like seas of Texas bluebonnets in the spring, to the amazing food, like these Spicy Pork Burgers with Chipotle Peach Mayo) I LOVE Texas and am grateful I get to call this one of a kind state my home!
Since I’ve lived here in Texas most my life, I’ve traveled to almost every corner of Texas, from the beaches of South Padre to the mountains of west Texas and everything in between. In fact, growing up and often now as an adult, many of our family vacations are to explore different parts of Texas.

You would think that since I’ve lived here for, thir well let’s just say years, I would be tired of spending our vacations in our home state. But Texas is so big and has so much to do and offer, that even after all these years I’m still discovering new things Texas has to offer!
Over the years, not only have Eric and I explored parts of Texas I’ve never been to, it’s been fun rediscovering old places that I loved visiting as a child, while bringing Eric along to see them for the first time. We’ve also had fun having mini staycations here in Austin and central Texas, exploring and rediscovering all the weird Austin things that makes my hometown so special.
In addition to watching the Mexican free-tailed bats emerge in a dark cloud from the Congress bridge on a warm summer night, or taking a dip in one of the many natural swimming holes that make up central Texas, or swaying to the beat of a drum at one of the world-renowned concert venues; over the years it’s also been fun to share with Eric some of my favorite Austin places and Texas foods (stay tuned as I’ll be sharing where LA MORENA® takes me around Texas on Instagram soon!)
Slowly he became obsessed with pecan pie, brisket, Fredericksburg peaches; but mostly he has traded in the traditional Italian dishes he grew up on, for his new favorite food – Tex-Mex and Mexican cuisine. Yes, if it were up to him we would have tacos or tortilla soup or enchiladas for every meal!
And because of my Texas upbringing and our love of Tex-Mex and Mexican cuisine, those flavors and ingredients somehow make it into most of our dishes without much effort. In fact, we love shopping at our local Fiesta to stock up on our favorite authentic Mexican ingredients, like LA MORENA® Whole Jalapeños (7oz & 28oz) and LA MORENA® Chipotle Peppers in Adobo (7oz & 13oz).
I keep these ingredients on hand at all times to use whenever we want some of our favorite Mexican dishes, but we also love taking these classic ingredients and adding them to some of our other favorite foods. For example, hot dogs and burgers are a summer time staple and are only made better when topped with some jalapenos or adding some spicy smokiness only achievable from chipotle peppers in adobo sauce!
The recipe I’m sharing today, Spicy Pork Burgers with Chipotle Peach Mayo, has all the flavors I love about central Texas but transformed in a delicious new way! These burgers are simple yet packed with flavor, a little sweet from homemade peach preserves and tad bit spicy with the help of several LA MORENA® Chipotle Pepper in Adobo (7oz & 13oz).
Helpful Tips and Information:
Cooking Tip: Got leftover chipotle peppers in adobo sauce? Pour peppers and sauce into a small food processor or blender and blend until smooth. Pour pureed mixture into ice cube trays and freeze in ice cube trays until solid. Once frozen, transfer chipotle ice cubes to a freezer safe baggie. When ready to use remove chipotle ice cube (one cube equals approximately 1 tablespoon sauce or 1-2 peppers) and thaw in the microwave or refrigerator.
Serving Suggestion: These burgers would be great served with ice cold watermelon, Mexican Street Corn, tortilla chips and guacamole or fresh peaches.

- Pork Burgers:
- 1 ½ pounds ground pork
- 1 LA MORENA® Chipotle Peppers in Adobo (7oz & 13oz) diced
- 2 tablespoons LA MORENA® Chipotle Sauce*
- 1 small yellow onion grated
- 2 cloves garlic minced
- ½ teaspoon each kosher salt and black pepper
- --
- Chipotle Peach Mayo:
- ½ cup mayonnaise
- 5 tablespoons peach jam or marmalade
- 2 LA MORENA® Chipotle Peppers in Adobo (7oz & 13oz) diced
- 2 tablespoons LA MORENA® Chipotle Sauce*
- ¼ teaspoon each kosher salt and black pepper
- --
- For Serving:
- Hamburger buns toasted if desired
- Sliced red onion
- Lettuce or arugula
- Cheddar cheese if desired
- For the Spicy Pork Burgers: In a large bowl combine the ground pork, chopped chipotle pepper, chipotle sauce, grated onion and minced garlic.
- Using your hands, gently mix the burger mixture until combined. Divide burger mixture into 4 equal portions. Being careful not to over work the meat, shape pork into ¾-inch thick patties. Using your thumb, press a small dimple into the center of the formed burger. Season prepared burger patties with salt and black pepper.
- Meanwhile, preheat an indoor or outdoor grill to high heat. Transfer burgers to preheated grill. Cook burgers for 4-5 minutes per side, or until cooked through.
- Serve Spicy Pork Burgers on hamburger buns with red onion, arugula and Chipotle Peach Mayo.
- To make Chipotle Peach Mayo: In a small bowl, whisk together mayonnaise, peach jam, chopped chipotle pepper in adobo, chipotle sauce, salt and black pepper. Serve at once or store covered in the refrigerator for up to two weeks.
You can simply scoop the chipotle sauce from a 7-ounce can of LA MORENA® Chipotle Peppers in Adobo (7oz & 13oz) OR you can purchase the LA MORENA® Chipotle Sauce (without the actual peppers) and use this for this recipe.
