Despite spending most of my time in the kitchen and constantly developing recipes, menu planning, and excessively researching food trends, sometimes it is hard for me not to get stuck in a rut when it comes to meals.
Tacos, spaghetti and grilled chicken and veggies make a regular appearance at our dinner table and I always struggle with what to make for lunch as I easily get bored of sandwiches.
And when it comes to breakfast, quick and easy is the name of the game, so oatmeal, cereal and fruit and yogurt are my typical weekday breakfasts.
But lately, I’ve been trying to put a little bit more effort and thought into my weekly meal planning because I really do love food!
Not only do I want our meals to taste great, I want our meals to be good for us and at this stage in life, they must be easy too! That’s why I was happy to recently discover Van’s® Waffles on my latest shopping trip to Sprouts.

If you’ve never had a breakfast salad you are really missing out! I first had a breakfast salad many years ago at a super popular local restaurant. That restaurant salad was so good and I thought a salad was such a great idea for a tasty, nutritious breakfast that I started making breakfast salads at home.
A few weeks ago, when I was really trying to get out of our meal time ruts and add more “better for you” dishes to our diet, breakfast salads came to mind, since they are a great way to add more leafy greens to your diet, which I can sometimes struggle with.
Today’s breakfast salad recipe, Bacon and Egg Breakfast Salad with Waffle Croutons, is simple, yet satisfying, and will keep you full all morning long, since this salad recipe has not only bacon and eggs, but Van’s® Power Grains® Original Waffles!

Bacon and Egg Breakfast Salad with Waffle Croutons
Change up your daily breakfast routine with this tasty and better for you recipe, Bacon and Egg Breakfast Salad with Waffle Croutons!
Ingredients
- For Honey Dijon Dressing:
- 2 tablespoons extra virgin olive oil
- 1-2 tablespoons honey
- 2 tablespoons white wine vinegar
- 2 tablespoons Dijon mustard
- ¼ cup Greek yogurt
- 1 garlic clove, minced
- 1/4 teaspoon each kosher salt and black pepper
- --
- For Salad:
- ½ tablespoon unsalted butter
- 1-2 large eggs
- 1 heaping cup spinach
- 1 tablespoon prepared Honey Dijon Dressing
- 2 strips low sodium bacon, cooked and chopped
- 1 Van’s Power Grains® Original Waffles, toasted and diced
- ½ small avocado, peeled and sliced
- Freshly grated black pepper and salt, as desired
Instructions
- To prepare dressing: In a small bowl, whisk together all the salad ingredients until well combined.
- Served immediately or store in an air tight container in the refrigerator for up to one week.
- To make salad: In a small non-stick skillet, melt butter over medium-low heat. Crack egg into skillet and cook for 3-4 minutes, or until egg white is set.
- In a small bowl, toss together spinach and dressing. Top salad with bacon pieces, waffle pieces, sliced avocado and sunny-side up egg. Sprinkle with salt and black pepper, as desired.
