Despite spending most of my time in the kitchen and constantly developing recipes, menu planning, and excessively researching food trends, sometimes it is hard for me not to get stuck in a rut when it comes to meals.
Tacos, spaghetti and grilled chicken and veggies make a regular appearance at our dinner table and I always struggle with what to make for lunch as I easily get bored of sandwiches.
And when it comes to breakfast, quick and easy is the name of the game, so oatmeal, cereal and fruit and yogurt are my typical weekday breakfasts.
But lately, I’ve been trying to put a little bit more effort and thought into my weekly meal planning because I really do love food!
Not only do I want our meals to taste great, I want our meals to be good for us and at this stage in life, they must be easy too! That’s why I was happy to recently discover Van’s® Waffles on my latest shopping trip to Sprouts.
Van’s Waffles are Non-GMO Project Verified, USDA Organic, Certified Gluten Free and have no artificial flavors. That means these waffles are not only convenient, but are nutritious and delicious and they are something I can feel good about serving my family.
Since the next few weeks are going to be crazy around here, I stocked up on every variety of waffles my Sprouts had to offer; including Van’s Organic Waffles which contain 15g of whole grains and 4 grams of protein per serving and are free from dairy, egg, artificial anything and cholesterol, as well are Non-GMO project verified.
I also got light and crispy Van’s Gluten Free Waffles, which are made with whole grain brown rice flour, sweetened with fruit juice, contain 21-23g of whole grains per serving and are free from dairy, egg, artificial anything, cholesterol and corn, as well are Non-GMO project verified.
And let’s not forget if you are looking for the best waffle to fill you up and fuel your whole day, Van’s Power Grains® Waffles have 10-12g of protein and 9-11g of whole grains per serving and are made with nutritious grains like cracked red wheat, steel cut oats, millet and brown rice.
In addition to waffles, Van’s makes a variety of snacks including Van’s Gluten Free Say Cheese! Crackers, multigrain crackers with 16g of nutrient dense, gluten free whole grains; which are perfect for adding a little variety to my daily snack time routine which is typically hummus and veggies.
These wholesome frozen waffles have not only been a welcome relief to my daily breakfast and snack routine, I decided to take things even further, and really break out of the box with my weekday breakfasts with today’s recipe.
Enter the breakfast salad!
If you’ve never had a breakfast salad you are really missing out! I first had a breakfast salad many years ago at a super popular local restaurant. That restaurant salad was so good and I thought a salad was such a great idea for a tasty, nutritious breakfast that I started making breakfast salads at home.
A few weeks ago, when I was really trying to get out of our meal time ruts and add more “better for you” dishes to our diet, breakfast salads came to mind, since they are a great way to add more leafy greens to your diet, which I can sometimes struggle with.
Today’s breakfast salad recipe, Bacon and Egg Breakfast Salad with Waffle Croutons, is simple, yet satisfying, and will keep you full all morning long, since this salad recipe has not only bacon and eggs, but Van’s® Power Grains® Original Waffles!
