With so many of us working from home these days, I’m curious, what is your go to lunch time routine? Do you take time to make a hot lunch or do you throw together a sandwich to eat on your back patio? Or, do you take time to escape the house and go grab lunch to go from your favorite restaurant?

Typically, I carefully plan my meals, so that I stay on budget and am not left with the “Oh no! What’s for dinner?” question at the end of the day when I am tired. And I have a pretty good arsenal of go to breakfast recipes, things like Peanut Butter Banana Breakfast Parfaits or oatmeal, that make mornings easy.

But even with all my planning, I usually never think about lunch. I am busy running errands, get wrapped up on the phone with a conference call or on the computer with work, that I forget to stop and grab a bite to eat and before I know it, it is already 4pm.

Or when I do think to sit down to eat lunch, it is something boring, like a peanut butter and jelly sandwich, or leftovers that I’ve already had for what feels like a million times.

In an effort to take back lunch and make it a tasty, enjoyable part of my day, I’ve been experimenting with several different wrap recipes. I love wraps because they are a lighter lunch option, are quick and easy, especially if you eat lunch on the go or at your computer, and they can be filled with pretty much anything you have on hand.

These Turkey Cranberry Wraps are such a delicious lunch option that use flavors and indigents that I usually have in my kitchen this time of year. And when paired with apple slices and air popped popcorn, a simple, light and satisfying lunch that I am happy to eat again and again!

Cooking Tip:

These Turkey Cranberry Wraps are a delicious and satisfying easy lunch recipe. However, they can be transformed into Turkey Cranberry Pinwheels, an easy appetizer recipe!

How to make Turkey Cranberry Pinwheels:

Prepare recipe as directed below, however, after rolling up the tortilla, place Turkey Cranberry Roll Up in the refrigerator for one hour to set up. When ready to serve, use a serrated knife to slice the roll up into one-inch pieces and place on serving platter.

What to serve with this Turkey Cranberry Wrap?

Air popped popcorn OR this Sour Cream and Onion Popcorn 

Fresh fruit, such as an apple, banana, grapes, berries, etc. served with this Healthy Honey Orange Fruit Dip 

Fresh veggies, such as carrot sticks, celery sticks, grape tomatoes, etc. served with ranch dressing or this Roasted Garlic Hummus 

A side salad, like this Spinach Berry Salad or this Pear and Pomegranate Salad

Turkey Cranberry Wrap

Turkey Cranberry Wrap

No boring lunches here! This healthy and satisfying Turkey Cranberry Wrap uses simple pantry staples to create a quick and easy lunch!

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 2 tablespoons reduce sugar dried cranberries, chopped
  • 2 tablespoons whipped cream cheese
  • 1 large whole wheat, low carb or spinach tortilla
  • 10 fresh spinach leaves
  • 2-3 slices low sodium or no salt added turkey deli meat

Instructions

  1. In a small bowl stir together chopped dried cranberries and cream cheese.
  2. Spread cranberry cream cheese mixture evenly over tortilla.
  3. Top cream cheese with spinach leaves and sliced turkey.
  4. Starting at the bottom of the tortilla, roll tortilla up to secure fillings. Slice tortilla in half, if desired, for serving.
