I don’t know about your neck of the woods, but even though the calendar says it’s fall, mother nature sure has quite a mind of her own. Which means down in Texas, we can still have temperatures well into the 90’s for most of autumn.
Sure, it would be nice to have a crisp, cool autumn day, you know to sip a Pumpkin Spice Latte without sweating, but us Texans know we just have to be patient and wait for those days to sloooowly arrive, much, much later in the season.
In the meantime, we sip cold refreshing drinks with a splash of fall flavor, like Apple Cider Slushes or today’s recipe for Caramel Apple Cider Floats.
This Apple Cider Float with ginger ale is such a fun and refreshing fall twist on a classic ice cream float! The bubbly, bold, crisp flavor of the ginger ale pairs so well with the warm fall spices found in the fresh apple cider.
And while we could certainly leave these Apple Cider Floats at that, adding a thick layer of sweet caramel sauce at the bottom of each glass adds a magical pop of flavor.
In fact, this Apple Cider Ice Cream Float might just become our go to treat after a warm afternoon spent pumpkin hunting at our local pumpkin patch!!
HELPFUL RECIPE TIPS AND INFORMATION:
Apple Cider Float INGREDIENTS:
Caramel sauce – The caramel sauce in this recipe is purely optional, but it does add a pop of flavor that I think is so delightful with each sip. You can use either homemade caramel sauce or store-bought caramel sauce. Personally, I prefer a salted caramel sauce for the rich flavor.
Vanilla bean ice cream – A good quality store bought vanilla bean ice cream is recommended for this recipe, however, you could also use this homemade No Churn Vanilla Ice Cream.
Apple Cider – I HIGHLY recommend using fresh apple cider in this recipe. It is widely available during the fall and winter months and can normally be found at apple orchards, farmers markets or the produce section of most grocery stores. Apple cider has a more concentrated flavor than apple juice and typically has spices, like cinnamon and nutmeg added to it.
If fresh apple cider is unavailable, then you can substitute “pressed” apple juice (such as Simply Pure Pressed Apple Juice).
I don’t recommend using regular (clear looking) apple juice or sparkling apple cider as a substitute, as neither will have as strong of an apple flavor.
Ginger Ale – Personally I love the flavor of ginger beer or “bold” ginger ale and I think these both work well in this recipe. However, if those have too strong of a flavor for you, then you could use regular ginger ale in this float recipe.
Whipped Cream – I didn’t include whipped cream this time, but whipped cream is a nice addition to this ice cream float.
Recipe for ice cream floats:
- Pour caramel sauce in the bottom of a tall glass.
- Add ice cream to glass.
- Pour apple cider over ice cream, filling the glass half way.
- Top with ginger ale, an extra drizzle of caramel sauce and a dash of cinnamon or nutmeg.
- Serve immediately!
HOW TO MAKE AN Apple Cider Float COCKTAIL:
Make this ice cream float recipe into a cocktail with a few simple swaps! Simply replace the ginger ale with an alcoholic ginger beer or hard apple cider for a hard apple cider float!

Apple Cider Float
Filled with crisp, spiced apple cider and refreshing bold ginger ale, this Caramel Apple Cider Ice Cream Float is a delightful treat on a warm fall day!
Ingredients
- 1 tablespoon salted caramel sauce (plus more for topping)
- 3 large scoops vanilla bean ice cream
- ¼ cup fresh apple cider
- ½ (12-ounce) can or bottle of bold ginger ale or ginger beer
- Ground cinnamon and/or nutmeg, optional for garnish
Instructions
- Pour caramel sauce into the bottom of a tall glass.
- Add ice cream to glass.
- Pour apple cider over ice cream, filling the glass half way.
- Top with ginger ale, an extra drizzle of caramel sauce and a dash of cinnamon or nutmeg.
- Serve immediately!
Notes
Tip: Place glasses in freezer to chill for 20-30 minutes before preparing ice cream float.
