Share this tip! How to keep spinach and other leafy greens fresh for longer? Add a paper towel to the container!  The paper towel will absorb extra moisture in the package, thus helping to prevent the spinach/mixed greens from becoming soggy and gross.  We’ve tested and shared this tip for years and can say it successfully keeps your leafy greens fresh for at least 3-4 WEEKS after we bring them home from the store!  Tip: When you see a bad leaf immediately remove it from the box to help prevent all the other leaves from going bad.  Note: You can use this tip with spinach/leafy greens in a bag or plastic container, but we find the best results are for those greens stored with a paper towel in a plastic container. Making hard boiled eggs this weekend? Use this tried and true method that has never failed us!!  Perfect Hard Boiled Eggs:  1. Place eggs in a single layer in a pot. Cover with 1 to 2 inches of cold tap water.
2. Place pot on stove top and bring to a full rolling boil. Boil eggs for one minute.
3. Remove from heat and cover pot with a tight fitting lid. For large eggs, let eggs sit in hot water for 12-13 minutes.
4. Fill a large bowl with ice and cold tap water. After about 13 minutes, use tongs to transfer eggs to bowl of ice water. Allow eggs to cool in ice water for 5 minutes.
5. Peel cooled eggs and enjoy.  Tips for easy to peel eggs:
1. Don’t use fresh eggs. Eggs that have been sitting in your fridge for about 5-10 days (but not past the expiration date) will be easier to peel.
2. The larger rounded end has a small indention or “pocket” that will help to start the peeling process.
3. Peel eggs under cold running water or in the bowl of ice water.  4. For high altitude, add 1 minute to all of the times listed above. Save for later or comment “Easter” and we will DM you the full printable directions!  Easter is just days away and we are getting ready by dying ALL the eggs!  Whether you have kiddos or not, these Whipped Cream Tie-Dye Easter Eggs are SO fun to make!  Whip some up this Easter season and then make it an annual tradition!  Here’s how we do it!  Whipped Cream Tie-Dye Easter Eggs  12 hard boiled eggs
2-3 cups white distilled vinegar
1 (8 ounce) tub frozen whipped topping, thawed
Food coloring gel  Place hard boiled eggs in a large bowl and cover with white distilled vinegar. Let sit in vinegar for 10 minutes.  Remove eggs from vinegar and pat dry with a paper towel or old dish towel.  Empty cool whip into a large baking dish. Add food coloring gel and swirl with a toothpick.  Add eggs (use gloves or tongs to prevent hands from getting too messy/dyed!!) and roll them around in the cool whip mixture.  Let eggs sit in cool whip dye for 10-15 minuets then remove and wipe clean with a towel.  Have fun and enjoy!  Tips:
*After dying, eggs should be stored in the refrigerator!  *Using gloves or tongs and wearing an apron is recommended, as food coloring may stain hands/clothes.  *Use a disposable pan and line table with newspaper or a disposable tablecloth for easy clean up. Some weeks the dinners we share are ones we are testing or haven’t had a chance to share on Kitchen Concoctions.  But this week was a lot of our go to favorite recipes that you can find on the blog!  1. Soy Ginger Salmon* with steamed broccoli with lemon garlic butter sauce* and  quinoa  2. Rotisserie chicken, dill pickle salad mix and store bought potatoes au gratin  3. Guinness Shepherds Pie* (Made a batch of this a while back and froze half which made for an easy dinner on a busy night this past week.)  4. Beef fajitas* with rice and refried beans  5. Easter is right around the corner and if you are planning on making dyed eggs or a batch of deviled eggs for your Easter brunch, you need to buy your eggs NOW!  Yes, for easy to peel hard boiled eggs our number one tip is to use eggs that are not too fresh. Ideally ones that have been sitting in your fridge for about 5-10 days (but not expired).  Why?  The egg whites of fresh eggs have a lower ph level which causes the egg whites (or albumen) to stick more tightly to the shell.  However, older eggs have a higher ph level which causes the egg white to loosen away from the shell, making them easier to peel.  Other tips to help you easily peel hard boiled eggs:  1. Crack and start peeling at the larger, more rounded end. The larger rounded end has a small indention and “pocket” that will help the peeling process start more easily.  2. While not shown here, peeling eggs under running water or in a bowl of water can help loosen the shell and ease in the peeling process. Shipping cookies this holiday season??  This is how we do it!  This method is certainly not going to win any awards for prettiest cookie box. BUT! We guarantee your cookies will arrive fresh and unbroken!  This also works really well for freezing baked cookies and will ensure they stay fresh and not get that weird freezer taste.  Note: This method for storing/shipping cookies works best for drop cookies, like our Cranberry White Chocolate Cookies shown in the video (comment “recipe” to have it sent right to you).  How to ship cookies:  1. Make a bag using your food saver.
2. Take two cookies (that have cooled completely) and put the flat sides of the cookies together. Fill bag with 12 cookies that are in a double layer.
3. Vacuum seal the bag following manufacturer directions.
4. Place vacuum sealed cookies in a cookie tin or plastic food storage container.
5. Place cookie tin in a shipping box or padded envelope.
