Roasted Rosemary Cashews

  • 2 (5-ounce) packages Emerald® Whole Cashews*
  • 1 tablespoon butter, melted
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon maple syrup
  • ½ teaspoon freshly ground black pepper
  • ¼ - ½ teaspoon cayenne pepper


  1. Preheat the oven to 350 degrees F. Line a small sheet pan with parchment paper. Set aside.
  2. In a small bowl stir together cashews, melted butter, rosemary, maple syrup, black pepper and cayenne pepper. Spread cashews in an even layer on prepared baking sheet.
  3. Bake at 350 degrees F for 12-15 minutes or cashews are golden brown and warmed through. Remove from oven and let cool for 10-15 minutes before serving.

Recipe Notes

*Since Emerald® Whole Cashews are already salted, you don't need to add salt to this recipe. If you were using raw nuts, then add 1/2 teaspoon salt.

Emerald® Deluxe Mixed Nuts or Emerald® Peanuts, Almonds and Cashews can also be used.
