Sausage, Apple and Kale Salad

  • Sausage, Apple and Kale Salad:
  • 2 tablespoons Mazola® Corn Oil
  • 1 pound chicken sausage links, 4 links
  • ½ cup apple juice*
  • 1 (5-ounce) package baby kale
  • 1 small green apple, sliced
  • 1 small pink lady apple, sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup walnuts, toasted
  • ¼ cup blue cheese crumbles
  • --
  • Creamy Apple Cider Dressing:
  • 2 tablespoons apple cider vinegar
  • ¼ cup Greek yogurt
  • 1 tablespoon Mazola® Corn Oil
  • 1 teaspoon Dijon mustard
  • 1 ½ tablespoons honey
  • 1/4 teaspoon salt and black pepper


  1. To make Sausage, Apple and Kale Salad: Heat 2 tablespoon corn oil in a large skillet over high heat. Add sausage links and cook, until well browned, about 3-4 minutes per side.
  2. Reduce heat to medium and add apple juice to skillet. Cover and cook until sausages are fully cooked, about 10 minutes, flipping sausages half way through cooking. When cooked thoroughly, remove from pan and cool slightly and slice.
  3. Meanwhile, combine kale, apples, red onion, walnuts and blue cheese in a large bowl. Right before serving toss with desired amount of dressing and sliced sausage.
  4. To make Apple Cider Dressing: In a medium-sized bowl or jar, whisk together the apple cider vinegar, Greek yogurt, corn oil, Dijon mustard, honey, salt and black pepper until combined.

*Chicken broth or water may be substituted for the apple juice.
