Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons unsweetened almond milk, soy milk, or water
  • 1 (14-ounce) can plain artichoke hearts, drained and rinsed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 ½ tablespoons lemon juice
  • 2 tablespoons diced yellow onion (or 1 teaspoon onion powder)
  • 2 cloves garlic, minced
  • 1 teaspoon finely chopped fresh rosemary (or ½ teaspoon dried rosemary)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sweet paprika
  • 1/8 teaspoon cayenne pepper

  1. Place all ingredients in a high-power blender or food processer. Blend for 3-4 minutes, or until smooth and creamy like hummus. Add additional milk or water, if needed, to help mixture blend.
  2. Transfer dip to a bowl, cover with plastic wrap, and chill in the refrigerator until ready to serve.
  3. Serve as desired with tortilla chips, pita bread or fresh vegetables.
