Mouth Full ‘O Cookies

I am not much for words today. Maybe it is because I have to wait until next June to find out if Tara is saved. Or maybe it is because I finally found out who died in book 6 and seriously bawled my eyes out (I know I am behind on the times).

Or maybe I am just tired. But honestly, maybe I am at a lost for words today because my mouth is full with the last one of these cookies. Which makes me sad. Must make more, ‘cuz these cookies are ‘healthier’ and tastier than most.

And on that note, I’m out.

Oatmeal Cookies

Prep Time: 20 minutes Bake Time: 10 minutes Makes 20-24 cookies

3/4 cup brown sugar
3 tablespoons unsalted butter, softened
¼ cup applesauce
1 egg
1 teaspoon vanilla extract
3 tablespoons milk
1 1/4 cups oatmeal
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 1/4 cup raisins
Preheat oven to 375° F. Lightly coat a baking sheet with cooking spray.

In a medium mixing bowl, combine the brown sugar and butter until well blended. Blend in the egg, applesauce, vanilla, and milk. Add the oatmeal, stirring well. In a small bowl, stir together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the oatmeal mixture, stirring well. Stir in the raisins.

Drop the dough by spoonfuls, spaced about 1 inch apart, onto the baking sheet. Bake for 8 to 10 minutes. Do not overcook. Transfer the cookies to a wire rack to cool. Repeat with the remaining dough.

    I don't think you understand how much this made my day. I LOVE cookies… It's like an obsession. It's worse than my Twilight obession, so this post was awesome for me. THANKS FOR SHARING!!!!
