Slight Carb Obsession

Eric loves bagels (and donuts, and muffins, and just about any bread or baked treat).

We eat them plan, with cream cheese or jam or used as a bun for a good ole ham, egg, and cheese sandwich.

If I am Eric is lucky sometimes we splurge at treat ourselves to bagels from that big bagel chain (you know the one).

And even though these bagels make my heart pitter patter (and my thighs cry), probably one of the things I look forward to the most from this special treat are all the fancy cream cheese spreads (sun-dried tomato my absolute fave).

So here’s my version of that fancy ‘Shmear’ with a fall twist!

PS: This is not a thick cream cheese spread, but more whipped, airy and light so it works well as a dip for fruit and graham crackers too!

Pumpkin Cream Cheese Spread

Prep Time: 5 minutes Makes: 1 cup

4 ounces cream cheese, at room temperature
1/3 cup marshmallow cream
1/3 cup pumpkin puree
1 teaspoon pumpkin pie spice

Whisk all ingredients together in a small bowl until combined.

Serve on bagels, toast, or as a dip for fruit or graham crackers.
