This one’s for my Mom.
She is a huge oatmeal person.
Like. Every. Single. Day.
She has recently become obsessed a fan of peach crisps.
My version of peach crisps.
Like. Every. Time. I. Go. Visit. Her. She. Wants. Me. To. Make. One.
And of course I do! ; )
But since I live in another city miles and miles away, I can’t make her a peach crisp all the time.
So this recipe is inspired by my Mom and her favorite peach crisp.
Maybe she can make it to change up her normal oatmeal routine and think of me (her favorite daughter! Haha! I kid. I kid, sis!).
PS- I so thought that I had shared that peach crisp recipe before but it looks like I haven’t! I can’t even find the pictures I know for sure I have taken! So it looks like I have another reason to make that peach crisp so that you all can have that recipe.
Peach Crisp Oatmeal

Prep Time: 5 minutes Cook Time: 10 minutes Serves: 1
1 cup vanilla almond, soy, or coconut milk
1/2 cup old fashioned oatmeal
1 large peach, peeled and diced
1 tablespoon butter
1 tablespoon brown sugar
1 tablespoon flour
¼ teaspoon ground cinnamon
2 tablespoons chopped pecans
In a medium saucepan bring milk to a simmer. Stir in 1/2 cup oats and peaches and simmer for 6-7 minutes, stirring occasionally. Cover, turn off heat and let sit for 5 minutes.
Meanwhile, combine butter, sugar, flour and cinnamon in a small bowl until a crumbly mixture forms.
Once oatmeal is ready, transfer to a bowl, top with crumb mixture and pecans. Serve immediately.
Mom ate oatmeal every day when she was out here. And it was 90 degrees outside. It made me laugh.
