Growing up we were always lunchbox kids.
My Mom meticulously packed four school lunches every night before she went to bed. Then every morning we grabbed our (New Kids on the Block) lunchbox and headed out the door.
Mostly our lunches were the same. Sandwich, chips, fruit/veggie, juice box, and a small treat (mini candy bar, cookie, etc.).
But every once in awhile my Mom would give us $.35 for a carton of milk or on a special occasion a Ice Cream Drumstick.
What she doesn’t know is that sometimes we wouldn’t get milk but would get an ice cream with our milk money.
Or maybe she DOES know, because ALL kids buy ice cream cones with their milk money. Right?
Those sure were special days! Especially since we almost NEVER had Ice Cream Drumsticks in our freezer at home.
Recently, when visiting my sister, her husband picked up a box of drumsticks. As my sister and I sat there, on a warm summer evening, talking, laughing and eating our drumsticks (my first one in YEARS), I was instantly transformed back to my childhood, all while making new memories (as adults) with my sweet sister!
This homemade version of that childhood classic was so fun to make and tasted just like I remembered. It does involve several steps and freeze time, but in the end it is oh so worth it. I used this Three Ingredient Vanilla Ice Cream but you could certainly use store bought, and I am sure all the other ingredients you already have on hand.

Homemade Ice Cream Drumsticks

Prep Time: 20 minutes Cook Time: 3-4 minutes Wait Time: 6 hours Serves: 4
1 cup chocolate chips, divided
3 teaspoons coconut oil, divided*
4 sugar cones
1 pint vanilla ice cream (homemade or store bought)
3-4 tablespoons chopped peanuts
Line a small sheet pan with wax paper, set aside.
Place 1/3 cup chocolate chips and 1 teaspoon coconut oil in a microwave safe bowl. Microwave on High for 30 seconds. Stir and microwave on high for an additional 30 seconds, repeating melting process until chocolate is melted and smooth (stirring after every 30 seconds).
Pour 1-2 teaspoons of melted chocolate into the bottom of one sugar cone. Dip a small silicone pastry brush or spatula, in remaining melted chocolate. Brush the melted chocolate up the sides inside of the cone. Place chocolate filled cone on prepared sheet pan and repeat with reaming cones and melted chocolate. Freeze chocolate filled cones for 1-2 hours.
After chocolate inside cones is hard, remove from freezer and scoop ice cream into cones. Place ice cream filled cones back on wax paper lined sheet pan and return to the freezer. Freeze for 1-2 hours.
Place remaining 2/3 cup chocolate chips and 2 teaspoons coconut oil in a microwave safe bowl. Microwave on High for 30 seconds. Stir and microwave on high for an additional 30 seconds, repeating melting process until chocolate is melted and smooth (stirring after every 30 seconds).
Working with just one cone at a time, quickly dip ice cream in melted chocolate, dipping just to cover ice cream scoop and top part of cone. Once ice cream is covered in melted chocolate, quickly sprinkle with chopped peanuts. Place finished cone on wax paper lined sheet pan in freezer while repeating dipping process with remaining cones. Freeze finished ice cream drumsticks for 30 minutes to 1 hour or until ready to serve.
*Note: Vegetable oil can be substituted.
