Kids in the Kitchen: Sunshine Slushy

Baby, it’s hot outside!

I don’t know about your neck of the woods, but here it is hot. Like, sizzling hot.

To top it all off (and I am not naming names) but someone, in an effort to turn down the air conditioner in the middle of the night, accidentally turned on the heat. Yeah… not the best way to wake up… drenched in sweat.

But thank goodness for ice cold beverages. Slushy, ice cold beverages, that are actually packed with a bunch of good for you stuff and tastes yummy and refreshing.

This slushy is packed with fruit and even veggies. Because there is so much going on in this summertime drink, naming it posed a a great deal of debate. Should it Banana-Carrot-Peach-Mango-Orange Slushy? Or Orange Fruit Slush? Or Mixed Fruit and Veggie Slushy?

But luckily, when naming recipes geared towards kids (and although this recipe is ‘geared towards kids’ anyone who is anyone with a thirst to quench will love this drink), you can have some fun with the title of the recipes. So because this is a brightly orange colored drink and full of healthy orange colored fruit and veggies (gotta get that beta carotene, vitamin C and potassium) and because it is hot outside (because of all those harsh sun rays), Sunshine Slushy it was!

Before summer’s end, take a few moments and whip up this cool, all-natural, drink!

Sunshine Slushy

Prep Time: 10 minutes Serves: 2

3-4 large oranges juiced (approximately 1 to 1 1/2 cups orange juice) 
½ banana, sliced 
½ cup grated carrot 
½ cup diced pineapple
½ cup diced peaches (do not peel) 
½ cup diced mango (peeled) 
½ – 1 cup ice 

Place all ingredients into a high power blender. Blend until smooth. Add additional orange juice or ice, if needed, to reach desired consistency. Pour into glasses and serve immediately. Note: Fresh or frozen fruit may be used.
