Ahhh…. the beloved Fruit Pizza!
So 1990’s!
In fact, I can vividly remember the first time I tried fruit pizza, mid 90’s when I was in middle school. My friend’s Mom made it for some event and I instantly feel in love.
I mean really what is there not to love? A giant sugar cookie topped with some sort of creamy ‘fruit dip’ and fresh, seasonal fruit! Fruit pizza just screams summer and is the perfect dessert for a summer dinner party!
Fruit Pizza was selected as the recipe for the month of June for the Lick the Bowl Good Baking Group. As I mentioned, the concept of Fruit Pizza is simple, yet there are so many variations. It didn’t even occur to me until last weekend, when I made Monica’s version from her cookbook, that the Patriotic Mixed Berry “Shortcake” Sheet Cake I shared a few weeks ago could have been labeled by some a version of fruit pizza.
The version in the Lick the Bowl Cookbook, had a classic, made-from-scratch sugar cookie ‘crust’ but then was topped with a creamy lemon curd filling and an assortment of fresh summer fruit. This recipe was so simple, yet refreshing! I loved how the bright lemon curd filling complimented the fruit perfectly!
I brought this fruit pizza to a summer dinner party with friends and it was loved by all! Since I didn’t change a single thing, I encourage you to purchase the book to get this fantastic recipe: Fruit Pizza (page 79 Lick the Bowl Good: Classic Home-Style Desserts with a Twist)!
