Hello August! For most, this month means that summer is quickly coming to an end. School supplies are lining the shelves of most stores and school will be starting over the next few weeks. Fall pre-season football is getting underway and I have even heard whispers of pumpkin in the blogging community.
But, um, in case you forgot, summer will technically live on for another six weeks or so, and unfortunately for my neck of the woods, summer like temperatures will live on for many weeks after that.
Instead of getting upset that it will be hotter than heck for the next foreseeable future, I will continue to embrace summer and live up my days at the pool, soak in as many late-night sunsets as possible and eat up as much summer food, specifically homemade Fresh Mint Stracciatella Gelato, that I can!
Part of being able to survive the Texas heat is enjoying a variety of refreshing summer drinks and ice-cold treats. Iced coffee, Lemon Berry Iced Tea, flavored sparkling water, and if we want to get super fancy with it and really treat ourselves, a milkshake, root beer float or frozen hot chocolate are all a welcome relief on a hot summer day!
Since today is National Root Beer Float Day (I don’t know who comes up with these things, but I’m always down to celebrate!), I decided I should share the “grown up” version of a root beer float that I’ve been drinking for many summers now.
This Mocha Root Beer Float is “spiked” with chocolate and iced coffee making it the perfect frozen treat for a hot August day. I’ll take one today to celebrate root beer float day and then have another one tomorrow, because having the strength to deal with 100-degree temperatures days on end is cause for a celebration!

Mocha Root Beer Float Ingredients:
- Chocolate syrup
- Cold brew coffee
- Vanilla bean ice cream
- Root beer
- Whipped cream
How to make a root beer float:
- In a tall glass, stir together chocolate sauce and cold brew coffee.
- Add ice cream and top with root beer.
- Top float with whipped cream, if desired, and serve immediately.
How to make a Mocha Root Beer Float Cocktail:
Make this root beer float recipe into an adults only cocktail with a few simple swaps! Simply replace the cold brew coffee with coffee liquor and/or replace the regular root beer with spiked root beer.

Mocha Root Beer Float Recipe
Celebrate National Root Beer Float Day and the dog days of summer with this refreshing frozen treat – a Mocha Root Beer Float recipe!
Ingredients
- 1 tablespoon chocolate syrup (plus more for topping)
- ¼ cup cold brew coffee
- 3 scoops vanilla bean ice cream
- 1 (12-ounce) can or bottle of root beer
- Whipped cream, as needed
Instructions
- In a tall glass, stir together chocolate sauce and cold brew coffee.
- Add ice cream to glass.
- Pour root beer over ice cream, filling the glass.
- Top with whipped cream and an extra drizzle of chocolate syrup and serve immediately!
Notes
To make this a cocktail, replace the cold brew coffee with coffee liquor and/or replace the regular root beer with spiked/hard root beer
