A new school year will be here before we know it and this easy Peanut Butter and Banana Quesadilla recipe is the perfect kid friendly after school snack!
How on earth is summer coming to an end? While I am so ready for the 100+ degree days to come to an end, and as much as I love fall, I am not ready to quit summer just yet! I have been having so much fun doing summery things with my little family the past few months, that I want summer to live on forever!
However, I know time passing by at the speed of light is not something I have very much control over. Instead, I must roll with things and take it all in, absorbing every moment, as best as I can.

In addition to invoking feelings that time is going by way too fast, the start of a new school year brings all kinds of other mixed emotions. I love fall (the foods, the holidays, the cooler weather) and the first few months of a new school year “speak to me”. I guess it is the smell of new books, the sparkly new school supplies and the ability to start “fresh” in the middle of a calendar year. When I used to teach, walking into a school in fall had such a different, a more exciting, feel to it, than walking into the school in spring.
And even though my daughter is not quite elementary school age, the start of a new school year still means we will be busy, busy, busy. It seems like there are ALWAYS more activities, lessons, appointments, work commitments and celebrations in the fall. Which, to be honest, sometimes I love doing all the things, while other times it can be overwhelming.
To help keep me going as we embark on a new school year; planning, delegating, organizing and stocking up on high protein, grab and go snacks are a must! That’s why I was happy to discover these NEW! Windstone Farms Creamy Peanut Butter Portable Packets on my most recent trip to Walmart!
These new convenient 1.15oz squeezable packets are packed with protein (7G of protein per packet) and are made from only USA grown and harvested peanuts. The peanut butter in these Windstone Farms Peanut Butter Packets tastes amazing (I’m pretty picky about peanut butter) and are perfect for kid’s snacks and lunches or throwing in my purse, backpack or carry on bag for when we travel (in fact, they are a TSA approved sized).
Not only are these new Windstone Farms Peanut Butter Packets convenient and nutritious on the go snacks for busy parents like me, they can be used to create simple lunch recipes and after school snacks, like today’s recipe for Peanut Butter and Banana Quesadillas.
This Peanut Butter and Banana Quesadilla recipe is actually inspired by something similar that I used to make with my students. It is a great, hands on beginner recipe that helps kids learn how to squeeze the peanut putter out of the packet, use a butter knife to spread the peanut butter on the tortilla and then slice the bananas. Kids then can add a sprinkle of mini chocolate chips and the drizzle of honey at the end (after the parents cook the quesadilla).
This quick and easy Peanut Butter and Banana Quesadilla is not only a fantastic after school snack, it would be great for a fun breakfast too! Grab the recipe below, and be sure to check out some of my other favorite snack recipes!
