How on earth is summer coming to an end? While I am so ready for the 100+ degree days to come to an end, and as much as I love fall, I am not ready to quit summer just yet! I have been having so much fun doing summery things the past few months, that I want summer to live on forever!
However, I know time passing by at the speed of light is not something I have very much control over. Instead, I must roll with things and take it all in, absorbing every moment, as best as I can.

In addition to invoking feelings that time is going by way too fast, the start of a new school year brings all kinds of other mixed emotions. I love fall (the foods, the holidays, the cooler weather) and the first few months of a new school year “speak to me”. I guess it is the smell of new books, the sparkly new school supplies and the ability to start “fresh” in the middle of a calendar year.
The start of a new school year means we will be busy, busy, busy. It seems like there are ALWAYS more activities, lessons, appointments, work commitments and celebrations in the fall. Which, to be honest, sometimes I love doing all the things, while other times it can be overwhelming.

This Peanut Butter and Banana Quesadilla recipe is a great, hands on beginner recipe that helps kids learn how to squeeze the peanut butter out of the packet, use a butter knife to spread the peanut butter on the tortilla and then slice the bananas. Kids then can add a sprinkle of mini chocolate chips and the drizzle of honey at the end (after the parents cook the quesadilla).

Peanut Butter and Banana Quesadilla Recipe:
Peanut Butter and Banana Quesadilla
A new school year will be here before we know it and this easy Peanut Butter and Banana Quesadilla recipe is the perfect kid friendly after school snack!
Ingredients
- • 1 (1.15oz) Windstone Farms Peanut Butter Packet
- • 2 whole wheat flour tortillas
- • 1 small ripe banana, sliced
- • ½ tablespoon mini chocolate chips
- • ½ tablespoon unsalted butter, softened
- • Honey, optional for serving
Instructions
- Squeeze one Windstone Farms Peanut Butter Packet onto one tortilla. Using a knife, spread peanut butter evenly over tortilla.
- Top peanut butter with sliced bananas and mini chocolate chips. Top bananas with the remaining tortilla and press slightly. Set aside.
- Melt butter in a small 9-inch skillet over medium-high heat.
- Add quesadilla and cook, flipping once, until tortilla is golden brown and crispy, about 2 minutes per side.
- Transfer quesadilla to a plate or cutting board and cut into four pieces. Serve immediately drizzled with honey, if desired.
Notes
To make this more of a true quesadilla, spread 2 ounces of cream cheese on one of the tortillas.
