A good sandwich is not only great for lunch, but for a quick and easy dinner too! This Spicy Southwestern Turkey Panini recipe, paired with some potato chips, pickles or some fresh fruit, is a hearty and satisfying lunch or dinner!

For many, sandwiches are so plain and boring, but quality ingredients are essential to a good sandwich and can take a boring sandwich from ho-hum to AMAZING. Because our approach to sandwiches, some might say that we are sandwich snobs. We don’t mean to be, but I guess when you like good food, well you like good food! Wink. Wink. For us every detail must be perfect. From the chips and pickle served on the side (a must!!), to the bread, the spread and of course the meat and cheese. 
 
We love sandwiches so much that we not only enjoy them for lunch, but often eat sandwiches for quick and easy weeknight dinners. Because we enjoy sandwiches for dinner often, I am always looking for ways to take our go to sandwiches up a notch. This not only includes using quality ingredients, but transforming our regular sandwiches into a panini, grilled cheese, or sub. 
 
Today’s sandwich recipe is loaded with slices of that quality meat and cheese. It is then lathered with a spicy mustard on the outside of the sandwich, because you then smear a quick and easy homemade avocado spread (um… hello guac lovers) on the inside. Smash it and toast it to ooey, gooey perfection and bam! I call that one heck of a sandwich!

Spicy Southwestern Turkey Panini

Spicy Southwestern Turkey Panini

This Spicy Southwestern Turkey Panini recipe, paired with some potato chips, pickles or some fresh fruit, is a hearty and satisfying lunch or dinner!

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 1 medium avocado, peeled and seeded
  • ½ tablespoon cilantro, finely chopped
  • 1 teaspoon lime juice
  • ½ large Roma tomato, diced
  • ¼ teaspoon salt, or to taste
  • 2 tablespoons spicy mustard
  • 4 slices sourdough bread
  • 4 slices Colby Jack cheese
  • 8 slices blackened oven roasted deli turkey

Instructions

  1. In a small bowl, mash avocado with cilantro and lime juice. Stir in diced tomato. Season to taste with salt.
  2. Preheat panini maker according to manufacturer instructions. Spread a thin layer of spicy mustard on one side of each slice of bread.
  3. Place one slice of bread, mustard side facing down, on a work surface and top bread with remaining ingredients in the following order: one slice Colby Jack Cheese, two slices Blackened Oven Roasted Turkey Breast, half of mashed avocado spread, two more slices Blackened Oven Roasted Turkey Breast, and finally one more slice of Colby Jack Cheese. Top sandwich with another slice of bread with mustard side facing up. Repeat with remaining ingredients for second sandwich.
  4. Place prepared sandwiches, mustard side facing down, on hot panini maker. Close panini maker and cook until hot, cheese is melted, and bread is toasty. Remove from panini maker and serve immediately.
