We love celebrating the holidays! From Independence Day to Christmas, we always look forward to some sort of special treat, time honored tradition or fun holiday themed activity.
Over the years, it has been fun to try out not only authentic recipes, but a few fun recipes for each holiday. Slowly, many of these recipes then become a must make year after year.
For Christmas we always make perfect Cut Out Sugar Cookies with Buttercream Frosting, which has been a family tradition for generations.
Then on Valentine’s Day we whip up these incredibly Easy Strawberry Cookies with festive sprinkles.
For Mardi Gras we make King Cake and on St. Patty’s, well of course there is always Guinness Shepherd’s Pie and a batch of Irish Soda Bread in the oven.

These simple little Birds Nest Cookies have also become quite the Easter tradition.
These Easter cookies are such a fun and festive no bake dessert that would also be a sweet addition to a spring baby shower.
Since this Birds Nest Cookie recipe starts with three simple ingredients and is easily decorated with irresistible chocolate egg candies, it is an easy recipe kids can make all by themselves.
These are fun to make in the weeks leading up to Easter and keep well in the refrigerator or freezer; if they last that long, as they are quite irresistible with that rich peanut butter and butterscotch flavor and crunchy texture.

Bird Nest Cookie Ingredients and Substitutions:
Chow mein noodles – Chow mein noodles are most common in this recipe, however, rice krispies, cornflakes or pretzel sticks could be substituted. For a gluten free replacement, use Cherrios.
Butterscotch chips – Peanut butter chips can be substituted. Milk chocolate chips could also be used in place of the butterscotch chips, however, the bird nests will have a darker color.
Creamy peanut butter – For an allergy friendly substitute, sun butter or chocolate chips can be used. If using chocolate chips, the bird nests will be darker in color.
Chocolate egg candies – We prefer dark chocolate Cadbury mini eggs for this recipe, however, milk chocolate Cadbury mini eggs also work. Other egg shaped candies, like malted chocolate eggs, peanut M&M’s, or jelly beans, could also be used.
How do I store no bake cookies?
These Easter treats can be stored in an airtight container in the refrigerator for up to one week.
They can also be frozen for up to two months.

Birds Nest Cookies
Sweet and crunchy, no bake Birds Nest Cookies are a classic Easter dessert. They feature chow mein noodles, peanut butter, butterscotch chips and Cadbury mini eggs.
Ingredients
- 1 (5 oz) container chow mein noodles
- 1 cup butterscotch chips
- 1/2 cup creamy peanut butter
- 30 chocolate egg candies, like Cadbury mini eggs
Instructions
- Line a baking sheet with parchment paper. Set aside.
- Place butterscotch chips and peanut butter in a large, microwave safe bowl. Microwave for 30 seconds. Remove from the microwave and stir. Repeat the process, if necessary, until all butterscotch chips are melted and mixed together.
- Once all butterscotch chips are melted, carefully fold in chow mein noodles, stirring until well coated.
- Using a 1/3 cup measuring cup, scoop noodle mixture onto the prepared baking sheet. Shape cookies into nest shape and immediately add two to three chocolate egg candies to the top of the nests.
- Let cookies sit at room temperature until firm, about one hour.
- Store cookies in an airtight container in the refrigerator for up to one week.
