These easy Valentine’s Day cookies are so simple that kids can practically make them on their own. They are definitely a fun dessert to bring to a Valentine’s Day party or would be an easy way to celebrate Valentine’s Day at home with your children after school!

How to make strawberry cookies from cake mix:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
- In a large bowl, stir together dry cake mix, corn oil and eggs; stirring until smooth.
- Using a medium cookie scoop, scoop dough onto a prepared baking sheet, approximately 2-inches apart.
- Bake for 9-10 minutes, or until lightly golden brown on the edges. Do not over bake!
- Allow the cookies to cool on a baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
How to make Easy Valentine’s Cookies:
To make these Strawberry Cake Mix Cookies a festive Valentine’s Day dessert, we melted white chocolate chips and drizzled the melted chocolate over the baked strawberry cookies. We then added festive Valentine’s sprinkles on top of the melted chocolate drizzle.
However, to make these cookies year-round, you could substitute the Valentine’s sprinkles with mini chocolate chips, rainbow sprinkles or pink or red sanding sugar.
Alternatively, instead of melting the chocolate chips to drizzle over the cookies, you could stir the white chocolate chips into the cookie dough before baking.

Start with the base recipe:
1 (15.25 ounce) box cake mix

Easy Strawberry Cookies for Valentine’s Day
These Easy Strawberry Cookies, a doctored cake mix recipe, is delightful any time of year but especially for Valentine’s Day!
Ingredients
- 1 (15.25 ounce) box strawberry cake mix
- 1/2 cup corn or vegetable oil
- 2 large eggs
- 1 cup white chocolate chips
- 2 teaspoons canola or vegetable oil
- Valentine’s sprinkles
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
- In a large bowl, stir together dry cake mix, 1/2 cup oil and eggs; stirring until smooth.
- Using a medium cookie scoop, scoop dough onto prepared baking sheet, approximately 2-inches apart.
- Bake for 9-10 minutes, or until lightly golden brown on the edges. Do not over bake!
- Allow the cookies to cool on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
- Once cookies are cool, place white chocolate chips and 2 teaspoons oil in microwave safe bowl. Microwave for 30 seconds. Remove from microwave and stir. Return to microwave for an additional 30 seconds. Stir again. Repeat as needed until chocolate is smooth and melted. *Caution bowl will be hot!
- Drizzle melted chocolate over cookies and top with sprinkles.
