Like most of you, we are giddy for all that the “ber” months offer – apple picking, fall hikes with sunset colored leaves, spooky Halloween movie, hayrides, delicious Thanksgiving feasts and of course magical Christmas traditions.
For Halloween specifically, we always love to celebrate with a few fun and spooky movies, pumpkin carving and our annual Ghoulish Grub night- dinner and dessert filled with fun, silly and tasty Halloween treats!
The last few years, we have added these Bat Brownies to our Ghoulish Grub recipe collection. This Halloween recipe is so easy to make, that kids can make them (almost) all by themselves.
For our Halloween brownie bites, we made homemade one bowl brownies and our go to chocolate buttercream frosting, but you could totally use a box brownie mix and store-bought chocolate frosting.
Or, for an even easier dessert, pick up premade brownie bites from the bakery department of your grocery store!
Either way, these Bat Brownie Bites are such a great bite sized treat! They are chocolaty and will totally satisfy your sweet tooth.
These two bite brownies are perfect for Halloween parties, a lunchbox surprise or for that spooky movie night at home!
HELPFUL RECIPE TIPS AND INFORMATION:
How to make brownie bites from a mix:
Preheat oven to 350 degrees Fahrenheit. Spray a mini muffin pan with cooking spray. Prepare brownies according to package directions and use a small cookie scoop to portion approximately one tablespoon of batter into each cavity of the muffin tin.
Bake for 9-11 minutes, or until set, and a toothpick inserted into the middle comes out clean.
Allow brownies to cool for 2-3 minutes in the muffin tin before removing from the muffin tin to cool completely on a wire rack.

For best results, bake brownie bites at 350 degrees Fahrenheit for 9-11 minutes, or until set, and a toothpick inserted into the middle comes out clean.

Bat Brownie Bites

Ingredients
- For brownie bites:
- 2/3 cup granulated sugar
- ½ cup unbleached all-purpose flour
- 1/3 cup cocoa powder
- ¼ teaspoon baking powder
- ¼ teaspoon kosher salt
- 1/3 cup neutral cooking oil (avocado oil, canola oil, etc.)
- 1 teaspoon vanilla
- 2 large eggs
- ---
- For Chocolate Buttercream Frosting:
- 1/4 cup cocoa powder
- 1 1/4 cups powdered sugar
- ¼ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk
- ---
- For decorating:
- Oreo cookies
- Candy eyeballs
Instructions
- For brownie bites: Preheat oven to 350 degrees. Spray a mini muffin pan with cooking spray and set aside.
- In a large mixing bowl, whisk together the granulated sugar, unbleached all-purpose flour, cocoa powder, baking powder, salt, oil, vanilla and eggs; mixing until well combined.
- Use a small cookie scoop to portion approximately one tablespoon of batter into each cavity of the mini muffin tin. Bake for 9-11 minutes, or until set, and a toothpick inserted into the middle comes out clean.
- Allow brownies to cool for 2-3 minutes in the muffin tin before removing from the muffin tin to cool completely on a wire rack. Allow brownies to cool completely before decorating.
- For Chocolate Buttercream Frosting: Prepare frosting by sifting together the cocoa powder and powdered sugar in a large bowl. Set aside.
- In a separate large bowl, using an electric mixer, cream together the butter and vanilla extract, beating until smooth. Slowly add the powdered sugar mixture and some milk a little at a time, beating until frosting is smooth and creamy. Add additional milk or powdered sugar, if needed, to reach desired consistency.
- Place prepared frosting in a piping bag fitted with a large star piping tip and pipe a star onto the top of each cooled brownie bite.
- For decorating: Untwist Oreos and scrape off frosting. Using a serrated knife, carefully cut the Oreos in half. Press Oreo halves cut side down into the frosting to look like wings.
- Add two eyeballs to each brownie bite and serve.
