Since I love sharing all these things with you and since I’m only human and get stuck in ruts too, I often try new twists on things we make regularly. Like, burgers have been on repeat all summer long, but in an effort not to get bored at our weekly cookouts, I have been playing with a few new burger flavors and toppings to jazz things up a bit (in fact, I have a new burger recipe coming at you on Wednesday!).
Another thing I always eat is fruit and yogurt parfaits. For years now they have been my favorite and go to breakfast, since they are easy and I always have the ingredients on hand. But even though I LOVE them, since I eat a parfait almost every day, I try to change things up every once and a while and use different fruit, a flavored yogurt or buy trying different granola recipes.
Today’s fruit and yogurt parfait recipe, Peach Parfait with Pecan Praline Granola, was one I started making last summer, when I couldn’t get enough of the fresh local peaches. I just love how the juicy peaches go with another famous Texas ingredient, pecans, as well as the thick and creamy Greek yogurt that I liven up with some warm spices.
For me, this twist on my favorite breakfast is just what I need to add a little variety to my regular breakfast routine!
Helpful Tips and Information:
Cooking Tip: It is best if ripe peaches are consumed immediately, however, to store, place peaches in the refrigerator for 3-5 days. Under ripe peaches should be stored at room temperature until ripe enough to eat, approximately 2-3 days. To freeze peaches, wash, peel and remove the pit from the ripe peaches. Place peaches in a tightly sealed freezer safe baggie and freeze for 3-6 months.
Money Saving Tip: Pecans can be expensive, to save money, stock up during the holidays (when nuts often go on sale for holiday baking) and store in the freezer, in freezer safe containers or baggies, for up to two years. In addition to stocking up on pecans and other nuts during holiday sales, you can often find pecans, and other nuts, on sale throughout the year in the produce, bulk and snack foods aisles/departments.

Start your day with this mouthwatering breakfast recipe, Peach Parfait with Pecan Praline Granola, using fresh, juicy peaches and homemade granola!
- Pecan Praline Granola:
- 1 ½ cups pecans
- 3 tablespoons unsalted butter
- 1/3 cup pure maple syrup
- ¼ cup packed brown sugar
- 2 ½ cups old fashioned rolled oats
- 1 teaspoon vanilla extract
- 1/8 teaspoon kosher salt
- --
- Peach Parfaits:
- 1 tablespoon pure maple syrup
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 cup plain Greek yogurt
- 2 small peaches diced
- 1 cup prepared pecan praline granola
- To make pecan praline granola, heat a large skillet over medium-high heat. Add pecans and toast, stirring occasionally until browned. Transfer toasted pecans to a large baking sheet and set aside.
- Place the butter in the skillet and cook over medium heat, stirring constantly, until the butter begins to boil up and becomes foamy. Continue cooking and stirring until butter starts to smell nutty and turn golden or toasty brown in color, about 6-8 minutes.
- Stir the maple syrup and brown sugar into the butter and bring to a boil. Stir in rolled oats, vanilla, salt and toasted pecans; stirring until oats and pecans are evenly coated. Cook for 5 minutes, or until oats are golden brown; stirring occasionally.
- Remove granola from heat and transfer to the baking sheet, spreading granola into an even layer, to cool completely (granola will harden some as it cools). Store cooled granola to an airtight container for up to one week.
- To make parfait, in a small bowl whisk together maple syrup, cinnamon, nutmeg and Greek yogurt; whisking until well combined.
- To assemble parfaits, in small glass jars or drinking glasses; spoon 2-3 tablespoons of the prepared yogurt into the bottom of the jar. Top the yogurt with several pieces of diced peaches and 2 tablespoons of prepared granola. Repeat layers until jar is filled. Serve immediately.
Greek yogurt mixture can be made up to one week in advance and stored in a plastic food storage container in the refrigerator.
